Kim's Macaroni Salad
This is a very good salad and will become my standard macaroni salad recipe. I took it to a family picnic and it was great. Because of the mixed group I only put one chopped jalapeno in it, and I also, for fun, used extra large macaroni--easier to get onto a fork at a picnic. I had made a big batch and had leftovers, which kept well in the fridge. It was still good when we finished the last of it ten days later.

Surprise Banana Cake
We thought this cake turned out a little heavy, so will be looking for another banana cake recipe. Also, watch the baking time--the stated time was a little too long for my oven.

Chocolate Cheesecake II
This one is a winner. I made it healthier with the following changes: chocolate graham crumbs instead of cookie crumbs, Half 'n Half instead of whipping cream, lower fat cream cheese instead of regular, and I reduced the chocolate chips in the topping to 1/2 cup instead of the 1 1/2 cups. And it was still rich, creamy and wonderful! After 10 minutes in the oven my crumb crust was starting to burn. My oven runs a bit hot, so next time I'll only bake it for 5 min.
