Chicken and Black Bean Chili
Fabulous. I only had green pepper, onion and garlic. Did not use chipotle only cayenne and chili powder. I did add an additional can of stewed tomatoes and more beans as I like pretty hearty. It was really yummy!Use plenty of fresh cilantro.Great recipe!

Honey-Lime Grilled Chicken
This was very easy and made the chicken really tender and moist. I did marinade from morning to evening so maybe that added to it. I also added about 1/3 cup white wine and some cayenne pepper to give it a kick which counterbalanced the sweetness of the honey. Good all around and very easy!

Chili-Lime Chicken Kabobs
I really liked this very easy recipe. I did about double the marinade (but I also had about 2 lbs. chicken breasts). I added about 1 teasponn salt (and it was on the low side). I added very little cayenne because I knew one of my guests didn't like spicy food. I then served garlic-chili sauce (store-bought) on the side. I did marinate for about 4 hours and then grilled chicken alone in skewers. It was tasty and juicy. Will definitely do again!
