Cod with Italian Crumb Topping

Cooking low carb, I substituted crushed pork rinds for the breadcrumbs, left all the seasonings the same, and brushed a little mayo and lemon juice in place of the egg, and it was GREAT! Very moist inside, yet crispy on the outside. I would recommend this recipe to anyone, low carb or not!

Lemon Herb Barbeque Sauce for Chicken

I used EVOO instead of vegie oil, and just tossed the chicken in the mix just prior to grilling. Not too "lemony". It had a awesome "Greek-like" flavor. Every piece was eaten, so the family obviously liked it!

Funny thing, I forgot the soda and vanilla, and it still tasted great! It's light and crispy, not heavy and chewy. My family and friends thought it was amazing!

Ham and Bean Soup

This is one of those soups that seems too "plain" to be any good. Wrong! I used canned white beans instead, and my family gobbled it up. Even the picky 2 yr old had 2 bowls!

I made these large sized, and they set up fine after sitting on the cookie sheet for a few minutes. All my ingredients were fresh, but the flavor just didn't seem right. I'll keep looking.

Delicious Ham and Potato Soup

It's a good hearty soup, but I thought it tasted a little bland, so I added some garlic powder and shredded cheese. I also used dehydrated shredded potatoes (hash browns).

Peanut Treats

So Easy! I melt all the ingredients, except for the peanuts, over low heat, added the peanuts, and just scooped out tablespoonfulls onto waxed paper. They set up and made the BEST little chews! A perfect combo of saltly and sweet. The first to go at the party. I will make these for years to come.

Tomato Soup I

Living in Montana means enjoying 4B's famous tomato soup, but at $7 a quart, I needed a cheaper "fix"! This soup is UNBELIVEABLE! My kids cringe at the word "tomato" but they gobbled this down, and came back for seconds. Wonderful with toasted cheese sandwhiches, or garlic bread.

Bread and Celery Stuffing

This is SO easy and yummy! I used stale hot dog buns (any "bread" would work) and it turned out amazing! My family was thrilled not having to wait until Thanksgiving for turkey AND stuffing. This one goes in our family book.
