Mesclun and Mango Salad with Ginger Carrot Dressing
Delicious. The dressing is tangy and adds a kick to the mango. I'll definitely make this again. I used baby spinach instead of mesclun.

Eggplant Parmesan
Delicious! I like that there is no breading on the eggplant. It gives it a fresher, healthier taste.

Spinach and Potato Frittata
Wonderful! Easy to make and delish. I made it for brunch for friends and they all loved it. The potatoes are great in this recipe.
