About this Cook
I am a 32 year old mom of two boys, 5 and 7 years old. I am also wife to a wonderful husband of 10 years. I am currently a stay at home mom and I recently finished my bachelor's in psychology. I love to be in the kitchen and I love feeding my family healthy and tasty foods! I also love to grow a vegetable garden in the summer, although here in Vermont, the growing season is kinda short. I love working out (to combat the weight gain from all the baking!), being outside, kayaking, fishing (we ice fish in the winter), and spending time with my boys!
My favorite things to cook
I love to bake and experiment with baking recipes. I have mixed results with my recipe changes. The changes are usually to make the recipes healthier. I love healthy cooking and baking. I have also recently begun using my crockpot and I am loving it!
My favorite family cooking traditions
Cookies at Christmas! My mom and I always made tons. I am continuing with my sons as they love to help in the kitchen. Also my mom's homemade bread. I still can't recreate hers!
My cooking triumphs
Birthday cakes for my sons. They have each had a special cake for each birthday, all handmade. There has been a racetrack, train, rocket ship, teddy bear, Darth Vadar...I love doing it and the boys get so excited! My husband and I recently made our first ever homemade donuts. It is was my first success at frying anything and they were so yummy!
My cooking tragedies
I have trouble frying things! The house always ends up stinking and the product burned!

Apple Carrot Muffins
We just enjoyed these for breakfast today and everyone loved them! I used 1 cup of shredded carrot and one cup of chopped apple. I subbed fat free sour cream for the buttermilk (since I didn't have any) and I added a bit more cinnamon! Just the thing for my large crop of apples and carrot! Healthy, tasty and very moist! I will make these again!

Winter Squash Rolls
These were awesome! I halved the recipe and used some already cooked and mashed squash that I had in the freezer from last fall. I didn't measure it but I has enough that I didn't need to add the milk. I baked in a 9 inch round cake pan and I had 8 good size rolls. The whole family raved about these and the leftovers were still moist two days later-many homemade rolls are very dry by then! This is a keeper for me!

Rhubarb Coffee Cake
This was tasty in my opinion however a little too tart for two members of the family. It stayed nice and moist and the streusel was very good. I will probably make it again and just add a bit more sugar to the cake part to please those who aren't as into the rhubarb taste! Very easy and a good breakfast!
