Double Tomato Bruschetta
I have made this twice, the first time I did not brush with olive oil and put in oven-BIG MISTAKE, this is a MUST for this recipe. The 2nd try I got rave reviews, I made them for my sister bday dinner as an appetizer for spaghetti and they were gone in 5 minutes, even the kids scarfed them down. I made a few changes, 1)I used canned petit diced tomatoes with basil and oregeno, so much easier, faster and cheaper! 2)used sun dried tomato spread(pesto) again, easier, fast and cheaper! 3) DEFINITELY brush with olive oil and brown bread first!! 4)I put sliced provolone cheese to "seal" in tomato mixture then topped that with shredded parmesan cheese. These make this recipe much quicker and more cost efficient!! Will make this part of our regular cycle !!
