Easy Paella

I left out the shrimp because I'm not a big seafood person, but this was delicious! There was a ton of leftovers cause I made so much, and it was very easy to reheat for lunch the next day.

delicious! Very moist, easy to make. Batter was so silky and smooth. It baked up beautifully. Very good with raspberry frosting.

Debdoozie's Blue Ribbon Chili

This recipe was so "semi-homemade" that I was a little suspicious at first, but it turned out delicious! all the flavors combined wonderfully and it tasted like made-from-scratch chili! My husband loved it, which is the ultimate test! Next time I will make it in the crock pot and let it simmer all day.

Cottage Cheese Chicken Enchiladas

This is a 5-star recipe if you do one thing: WARM THE TORTILLAS BEFORE ADDING THE FILLING! if you don't, the tortillas will just split and you will have a huge, unsightly mess. put a skillet over low heat and warm a tortilla on each side for about 15 seconds, then wrap them. It makes all the difference.

Eggnog Cheesecake III

This was such a huge success! I took some suggestions and added a pinch of cinnamon and nutmeg to the crust, added an extra 1/4 cup eggnog, and made the filling in a food processor. It turned out so well! It firmed up perfectly and there were no cracks, and it was so incredibly smooth! I took it to work and my coworkers just devoured it. I've been getting compliments all day! I will definitely make this again!

Pecan Pie V

I love this pie. I made it for a thanksgiving party at work and it was a huge hit! Everyone said it tasted so much better without that sickly-sweet flavor you get from corn syrup. One coworker even asked me to make an extra pie just for him. I will definitely make this recipe again every chance I get.

Delicious Ham and Potato Soup

This was one of the rare occasions where the recipe turned out perfectly the first time! I added a cup of shredded cheese right at the end to give it a little more flavor, and it was delicious! My husband said he wanted to eat it every day!

Plain Caramel Apples

Tasted fine, but you're better off getting the caramel dip from the store and just using that. I put the apples on the greased aluminum foil, and I couldn't get them off! What we were able to pry from the foil tasted good, but I ended up throwing the whole batch away because we couldn't separate the apples from the metal. It was really disappointing.

Roasted Pears with Caramel Sauce

I thought the sour cream would be too tart with this dessert, but it actually added a wonderful creaminess. I would definately recommend it for cool summer or fall nights when you feel like putting the bit of extra effort forth for dessert.

Pumpkin Cheesecake in a Gingersnap Crust

I first tried this recipe as a thanksgiving experiment three years ago. I made it for my now-husband's family and it was a huge hit. Now I make it every year for his family, my mom, and my sister's family and everyone loves it! There's no need to make any changes to the recipe, it is wonderful just the way it is!
