I have never made ribs before, because I am just not a big meat eatter, but decided to try something new for the hubby. If you are going to use a honey or sweet based bbq sauce, don't put as much brown sugar. I always taste my sauce before I put it on my ribs, if it is too sweet add a little more vinegar. If it isn't hot enough, add a little more hot sauce. I have made these ribs quite a few times now, and each time I try something a little different and they are always good. I wouldn't cook them on low for a full 8 hours, they are over done then. I cook them for about 6 hours on low, bringing the bottom ribs to the top, and the top to the bottom...once. This always makes it where it doesn't stick as much. Great recipe!!!
