Never Fail Applesauce Spice Cake
About this Cook
I live with my husband in a small village just outside of Vienna Austria. My favorite activities are taking long walks in nature, cooking, reading, and settling down on the couch to watch something entertaining. People think I'm crazy because my favorite time of year is Autumn, my favorite plant is the pumpkin, and I dream of antiquing through America, with special attention on New Hampshire, Connecticut, and Vermont. Most people want to go to a tropical island, but I want New England! :-)
My favorite things to cook
Birthday cakes, cookies, pasta, and pies. One day I hope to gather up the courage and try making my own bread.
My favorite family cooking traditions
My mother's homemade salsas with diced multi-colored heirloom tomatoes, tomatillos, cilantro and corn all fresh from the farmer's market! I also love my Viennese father's cucumber salad and 'kraut fleckerl,' which are egg noodles cooked with finely minced white cabbage and onion. And of course, I love it when I am sick and my darling brings me tea and biscuits in bed. It may not require much cooking, but my my, he does serve them with love!
My cooking triumphs
Home made marshmallows, addictive chocolate chip cookies, divine brownies, delicious cheesecake, soft old fashioned molasses cookies with lemon glaze, spicy apple pie, and every pasta I ever made with fresh ingredients.
My cooking tragedies
The first Thanksgiving turkey I ever roasted...it took much longer than I expected and just didn't meet my expectations. Hats off to anyone who mastered it the first time around!

Never Fail Applesauce Spice Cake
A delicious cake! Moist, nice spice combination, and the crunchy nuts are a wonderul addition. I left out the suggested topping and applied regular cream cheese frosting. Yummy!

Beef Tenderloin With Roasted Shallots
This is a great recipe. After reading reviews where some said to follow the sauce recipe exactly and other said to puree it all until smooth, I decided on pulsing the shallot and bacon bits until smaller but not totally liquified. Really delicious! I used white wine and brown sugar instead of port, (it's what I had on hand) and rolled the raw tenderloin in a mix of hacked thyme, rosemary, salt & pepper about five hours before cooking. Wrapped tightly in plastic wrap and refridgerated up until an hour before cooking, when I allowed it to rest until it reached room temperature. My oven took longer than the suggested cooking time, I ended up cooking the roast for a total of 35 minutes. Very, very tasty!

Chewy Coconut Cookies
Awesome. I used 1 teaspoon of vanilla instead of 1/2, and also used FRESH grated coconut. Turned out really great, and tasted even better the second day. Thanks for the wonderful recipe!
