Jamie's Cranberry Spinach Salad
This was a hit! Skipped the onions, reduced the sugar and used roasted & slivered almonds found in the salad aisle. Couldn't be easier.

Layered Chicken and Black Bean Enchilada Casserole
Very good and won rave reviews from my 12 year old. I did have to change a few things...used flour tortillas instead of corn and didn't use the green chilies. Oh, and I used a taco seasoning pack instead of the other seasoning because it was easier. Great flavor will definitely make this again!

Easy Sausage Stuffing
I loved the flavor of this and will make again, however I found that it needed more broth. Luckily it was rectified with gravy from the Turkey!
