Spinach Marie
A very good way to do spinach, but next time I will probably throw in some swiss or feta. Threw in some bacon as another reviewer suggested & it made for a tasty surprise in each forkful.

Chicken Florentine Rice Casserole
Surprisingly good & easy. I didn't use all of the individual spices, but used Italian seasoning instead since it had the same stuff in it, plus a bit more. Will definitely make again, it was a real hit!

Amish Breakfast Casserole
We fixed this for Christmas breakfast & it was a real hit. Will definitely make again, but with more bacon (only had about a half a pound). The only problem was that it wasn't a recipe that could be made ahead & popped into the oven in the morning. Only real change that I made was I cooked it at 450 for 20 minutes & still let it rest for 10 minutes. Worked perfectly (at least in my oven).
