I'm a registered dietitian who loves to be in the kitchen (believe it or not, some RDs don't like to cook!). I believe it's extremely important for me as a dietitian to be able to "talk food"...that is, to be well-versed in meal planning, healthy meal prep, grocery shopping, label-reading, food substitutions, etc. I like how I can give my clients real-life information that they can use in the kitchen. I recommend allrecipes.com as a place where clients can search thousands of recipes where nutrition information is usually posted :)
My favorite things to cook
I'm very into health (obviously) and so I'm always experimenting with healthy alternatives to family favorite recipes. Cooking/baking with whole grains is currently a passion of mine. While I am health conscious, I'm still human and like to make the good stuff...desserts! I'm an avid baker and love creating cakes, cookies, bars, muffins...my husband loves me! Overall, I love to make simple yet healthful dishes. I try to incorporate lots of fruits and veggies into my diet...I love trying new things with beans, salads, whole wheat pasta, stir fries, grilling...and much more!
My favorite family cooking traditions
My mom makes a killer loaf of banana bread. I have eaten a lot of banana bread in my life, and none is as good as hers. I make a mean mashed potatoes dish and yummy oat bran muffins.
My cooking triumphs
Anything that tastes good and gets compliments is a triumph to me :)
My cooking tragedies
I can't master homemade bread or rolls.

Slow Cooker Fruit, Nuts, and Spice Oatmeal
Needs some sweetness...I sprinkled with brown sugar and drizzled with honey. Put on warm setting overnight and it didn't burn. May make again if I need to have something pre-prepared.

White Chili with Chicken
Very tasty! I added extra chicken, garlic powder + fresh garlic, green bell pepper + canned green chilis. I also doubled the cornstarch mixture...1/4 cup cornstarch + a little under 1/2 cup water...this helped thicken it up nicely! Will definitely make again!

Easy Sugar Cookies
Super easy...tastes great!!! Don't change a thing. Make sure the butter is room temp.
