Coconut Cake III
I made this for Easter dinner and it received great reviews. I toasted all the coconut used in the frosting and used just half the sugar (it is plenty sweet). I added 1/2 cup crushed pineapple to the batter, and used cream of coconut instead of the oil. I baked in 2 9" pans and just frosted in between the layers and on top, adding cherries for decoration. This cake is yummy and very moist, but VERY sweet!

No Bake Peanut Butter Pie
Where has this dessert been all my life?!? I made this for Easter dinner and it was a hit. I used a chocolate graham cracker crust and decorated the top with chocolate syrup. It is best served just slightly thawed. This is a fast, easy and economical dessert - cost me about $5 to make this.

Grandma Johnson's Scones
I made these for a baby shower tea party and they could not have been more perfect for the occasion! I can't believe I've never made these before, I love them! I omitted the raisins, and made 3 versions: chocolate chips, dried cranberry with vanilla extract, and orange juice. For each scone, I scooped about an ice cream scooper-size onto the cookie sheet instead of cutting (I prefer the random look, and the crispy edges that are achieved this way). Delicious and perfect with a cup of tea.
