Honey Baked Chicken II

I used boneless, skinless chicken breasts and cut the butter in half. Would cut the butter to 1/4 next time, to save calories. Really good and easy.

Vegetarian Korma

With the substitution of light coconut milk instead of tomato sauce and heavy cream, and the addition of broccoli, cauliflower and spinach (in lieu of some of the potato and carrots), I could not stop eating this!

Ginger Veggie Stir-Fry

I made this with my own fave veggies (sugar snap peas, broccoli, cauliflower, mushrooms, spinach) and it was delicious, and filling too! I might add some cashews or tofu next time, but SO good! Is there a way to make it with less oil? Maybe use the soy sauce to mix with the cornstarch instead of oil?

Egg Drop Soup I

I am giving this 5 stars for being super easy, cheap, fast, tasty, filling and relatively healthy. I think almost everyone has these ingredients in their house at any given time. I added 1 cup frozen corn and it was really good.

Chicken Stir-Fry

This was good but not excellent. My recommendations: double the sauce and the cornstarch. Use 1/2 on chicken as directed, other 1/2 on the veggies (add constarch right after veggies and soy sauce mixture when veggies are halfway done). Also double the veggies. Do not double the water/chicken bouillon. I added red pepper flakes, but maybe it needs some Chinese 5-spice or some kind of asian chili paste. Probably needs some fresh ginger and green onions. I served over brown rice, and served egg drop soup and edamame on the side.

Braised Balsamic Chicken

I liked this more than my hubby, he just doesn't like cooked tomatoes and onions much, but he really like the chicken flavor as did I. I cubed the chicken and served it over brown rice. Next time I would add a clove or two of minced garlic in lieu of the garlic salt. I think it was the rosemary that made the dish. I left out the thyme as I didn't have any. I really appreciate dishes like this that are low in fat, but you don't miss the fat.

Swiss Sherry Chicken

This probably deserves 4.5 stars, but it is somewhat fattening and clean-up is a bit of a pain, so 4 stars. It is really tasty and almost decadent. I think pounding the chicken thin would improve this.

Fresh Tomato Salsa

Okay, this should be called Pico de Gallo, but it's awesome. I shied away from the 5 chiles, but with only 2 it was pretty tame. That being said, it was gone in minutes. This is super healthy and fat free-5+ stars.

Anaheim Fish Tacos

I made this for the first time for company-there weren't any leftovers for 4 people. I loved it, but I made a couple mistakes. I used soft taco size flour tortillas (the hubby does not like corn tortillas) and these were much too big. They had a snack size that would have been much better. I also should have used a slotted spoon to fill the tacos because the sauce is watery and messy. I also forgot the cumin, and I love cumin, but it was still delicious. I used "Better than Bouillon" to make the chicken broth so that probably made up for it. I served with lettuce, shredded cheese and "Guacamole" from this site-yum! I will definitely make this again. The runny sauce is annoying-but it gets 5 stars for flavor, texture, and being super healthy! Also, you can make it in a non-stick pan so super easy clean-up!

Cheesy Potato Soup II

This was really good, although I did alter it to suit my tastes, it still deserves 5 stars. I used light butter spread, non-fat milk, reduced fat cheddar and better than bouillon to make broth. I also added celery salt rather than celery, garlic powder and fresh ground black pepper.

Garlic Chicken

My husband makes this at least once a month, only we call it Chicken Parmesan. We always have leftovers because it's just the 2 of us and the leftovers nuke up suprisingly well. The salad idea is a good idea too. We usually melt shredded mozzarella on top (only on the breasts to be eaten that night) during the last 5 minutes of baking and serve with marinara sauce. Yum!

Slow Cooker Chicken Parisienne

This was exactly the slow cooker recipe I've been looking for for years-but I did a couple things differently because of what I had on hand and I think it made it even better. I used cooking sherry instead of white wine and I also used less sour cream than it called for. Will make often!

Mother's Ham Casserole

This was okay, nothing special, and because of the number of pans(4), it gets 3 stars for being way too much effort for the results. If I make it again, I will leave out the carrots, celery and the green bell pepper, add tons more sauteed onion, try some broccoli, and halve the bread crumbs. The sauce was good, but next time I will add the cheese on top instead of in sauce.

This turned out wonderfully and the pork chops were moist and tender. I did use fresh mushrooms and 1/2 tbsp cornstarch and served over baked frozen french fries. Definitely a keeper!

Sirloin Tips and Mushrooms

I'm giving this five stars for taste and easiness. However, mine turned out way to thin. I used cooking sherry, omitted the salt,and 1/2 tbsp brown sugar. Next time I will use 8 oz. fresh mushrooms, no water, and tomato paste and put all in the crock pot. I served with potatoes, can't really imagine it with noodles. Would be great also with a loaf of French bread to soak up the extra sauce.
