Chocolate Chip Banana Muffins

Reviewed: Aug. 6, 2009
Turned out great - very moist - didn't have yogurt, so used sour cream and a pinch more sugar to compensate.

Best Chocolate Chip Cookies

Reviewed: Aug. 4, 2008
This was my ideal cookie recipes and didn't change the ingredient list in the slightest - I have tried the others and wasn't as impressed by them. Although the 'big fat c. c. cookie' recipe elsewhere is ok, sometimes you don't want a mini cake in texture; it is too heavy. This was perfect. I made adult size - I left the dough in spoon drops and didn't flatten them ...10 minutes later they were crispy around the edge and chewy in the middle. For my toddler, so that she could hold the cookie in her smaller hand, I made small cookies by using half the batter and flattening the doughball out by half with a fork. They turned out more crispy than chewy... which is perfect for her. Overall this will be my number one c. c. cookie recipe!

Followed recipe. Pre cooked chorizo as per recommendations. Added garlic powder and cubes of Emmentaler Swiss cheese. 10 extra minutes of cooking. Turned out very moist and flavorful. Will cook again.

Amazingly Easy Irish Soda Bread

Reviewed: Mar. 17, 2008
Made for St. Patrick's Day meal. Prepared as decribed. Came out well. Of course, soda bread is naturally a bit dry. Nice change adding authenticity to our meal.

Diane's Colcannon

Made for St. Patrick's Day meal! Nice big chunks of onion and cabbage. Added sour cream to the mashed potatoes. Used real bacon bits and no fat drippings. Turned out very well. Will prepare again!

Irish Chicken and Dumplings

Reviewed: Mar. 17, 2008
Made this for St. Patrick's Day meal. Very well received. Added parsley and poultry spice to the dumplings mixture. next time might only make 3/4 of the dumpling mixture - soaked up all of the liquid and wasn't enough to cook the top all that well. Saw suggestions to use chicken broth substitution - will try that next time. Served with soda bread, steamed cabbage and colcannon; finished with Irish cream bundt cake muffins! Yum!

Irish Cream Bundt Cake

Reviewed: Mar. 17, 2008
Today is St. Patty's Day! Last night made this recipe into individual muffins with shamrock muffin papers! Wow! Very nice. The glaze seemed greasy at first with that amount of butter, but it works in the final product. Didn't find the liqueur too overpowering. Very nice, will repeat next year! Top rating!

Glazed Apple Cookies

As good as everyone says - be sure not to overcook. Coarsely chopped walnuts worked well for me to add a crunch.

Anniversary Chicken I

this is great just as is. The top becomes crispy and yet there are juices from the ranch dressing and melted cheese to pour over potatoes. I never have any teriyaki so I use some cajun meat rub.

Autumn Cheesecake

Reviewed: Sep. 12, 2007
Wonderful!.. BUT READ THE REVIEWS...if you leave the apples on top they will turn to rubber. Pre-saute them and then bury them in a bit of cheesecake. Do not be afraid to substitute some of the white sugar for brown sugar, roughly chop the pecans for better flavor/texture and sprinkle some of the crust on the top. A little caramel drizzled on top is nice too!

Clone of a Cinnabon

As amazing as all the reviews state. Wonderful dough out of the breadmaker - too easy! Added raisins to one half for hubby and pecans on the other half for me. Next time might try to integrate the caramel base of the Cinnamon Rolls I recipe.

Great Pumpkin Dessert

Super Easy! Super Tasty! Salted butter topping with nuts a little salty - might try unsalted butter. Definitely blend in some brown sugar for more pumpkin pie taste - pecans will be an awesome variation too. Overall wonderful!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Aug. 31, 2007
T-H-E best Oatmeal Raising Cookie Recipe EVER! Thick, moist, chewy, flavorful - it has it all. I added a pinch of ginger and nutmeg too for another twist. AMAZING with jumbo flame raisins soaked in hot, sugared water! I have used the base with chocolate chip & cranberry substituted for the raisins as well. BE FOREWARNED: husbands and workplaces will not mearly ask for the recipe but will insist that you bake and bring cookies in on a regular basis.

As fantastic as everyone claims! Wonderfully moist and flavorful. Skipped the potato chips to keep fat, salt and preservatives at a minimum - used bread crumbs and turned out equally well! Delish!

Pecan Tarts

First skeptical about this recipe's claims, turned out being very, very pleased. A super quick, fuss-free preparation when paired with pre-made pie/tart shells that is perfect for surprise company. Added extra pecans as previously recommended...very regal results! Made it to one of my favorite recipes!

Mushroom Orzo

Good recipe! I agree - a little on the greasy side, though. Recommend using half the butter or substituting with something else. Chicken broth would boost the flavour instead of water.
