I'm not a huge fan of ranch, but I needed a quick and easy chicken recipe using the ingredients I already had, so I decided to try it. This recipe is so good and so easy. I used Ken's ranch dressing and crushed garlic. I will be making this again. Thanks!

I followed some of the other suggestions. I substituted whole wheat flour for the white flour and applesauce for the oil. I did add ground flax seed, dried cranberries and chopped walnuts and I used skim milk. I did not have a problem with sticking but I did not use muffin cup liners. I thought these muffins were really good and I will be making these a lot.

I made this dish last night and my husband and I loved it. I had never made chicken piccata before and I am not much of a cook, but this recipe is very easy. I did double the sauce as recommended by others and tossed some penne in it. Thanks for sharing.
