I am the Mother of 2 boys, 23 and 19. I have been married for 25 years. I work full time in the medical field and love to cook, especially when I have time.
My favorite things to cook
I love to bake desserts and try new recipes. I have recently started a baking class with about 11 youth girls from my church. They are so eager and I am really having a wonderful time. My husbands the griller, I just get the food ready to grill. Love fresh vegies.
My favorite family cooking traditions
I have my grandmother's old cook book and I love to try some of the recipes she made when our family is all together

Easy White Chicken Enchiladas
This is a great easy recipe. I made it for my family and they loved it. I teach a cooking class for a group of youth at my church and they loved it also and have made it for their families. I used roasted chicken from the store and went exactly by the recipe the first time. I will try different versions next time also.

Penne with Pancetta and Mushrooms
I made this last night and we all loved it. Like others I didn't have pancetta so I used bacon and sour cream instead of heavy cream, and I added a box of chopped spinach. I think the next time I make it I will triple the sauce.
