I am a wife and mom of a three-year-old. I work full-time as an insurance manager. I love to cook when I have the time. Weekdays are a rush, but Sunday afteroon is a great time to prepare dinner, try a new recipe and make a meal to be used on a weekeday.

My favorite family cooking traditions
Every year my father makes meat pie which we have on Christmas Eve. It's the best ever! At Christmas my mother makes gumdrop cake, which is better (dense and almost dry?) and unlike any I've had elsewhere. My mother-in-law makes the best scotch cakes...
My cooking triumphs
Hmm...prime rib and ribs. I don't make "beefy" dishes a lot, but I've had success. I think I can thank my meat thermometer. Soups and roasted vegetables as well....
My cooking tragedies
The first time I tried my slow cooker I made a casserole. It was horrible. For an event I made a lemon sour cream pie and just before serving I realized that I forgot to bake the crust before adding the custard! Fortunately, the custard came out easily, we baked the crust and put the filling back in. Despite my mistake, it was awesome!

Addictive Sweet Potato Burritos
Great recipe! Filling and flavourful. I thought that the texture may be mushy with the sweet potatos and beans, but it was not. The only change I made was black beans instead of kidney and I did not mash the beans. Will make again.

Oatmeal Pancakes II
Great - makes perfect pancakes! The only substitution I made was using whole milk instead of buttermilk as that's what I had in the fridge.

Black Bean and Couscous Salad
Great recipe! Made the following changes: quinoa instead of couscous, doubled the dressing (I think that's essential) and used only one can of black beans. Very versatile recipe. Excellent for a crowd or to have in the fridge. The lime juice tastes great so don't skip it!
