Judy's Strawberry Pretzel Salad

Reviewed: Jun. 24, 2008
Delicious! I was worried because I'm not a jello fan, but the jello layer was wonderful...not at all like jello when you add the sliced strawberries! I used frozen sliced in sugar. The pretzel layer was very tasty...a nice change from a cookie or graham crust. Thanks for a tasty recipe!

Chicken And Apple Curry

Reviewed: Jun. 24, 2008
My husband and I thought this recipe was very flavorful! To cut down on fat, I only used 1 Tbsp of butter and used skim milk...still tasted great. Also, I just used a can of chicken broth instead of measuring out a cup. This made for more liquid for the sauce. As another reviewer recommended, I cut the chicken into chunks (only used 4 chicken breasts) before cooking. Thanks for a tasty recipe!

Spicy Beef Curry Stew for the Slow Cooker

Reviewed: Feb. 10, 2008
Love this recipe...and it's so easy to make! As another reviewer suggested, I pureed the can of tomatoes (excellent suggestion because I hate tomato chunks) and dredged the beef in flour and that seemed to help thicken up the sauce. Instead of a whole jalapeno, I pureed about 3 slices with the tomatoes. Served over brown rice. Thanks for the recipe!!

To Die For Blueberry Muffins

Reviewed: Jan. 19, 2008
Wow! These really are to die for...and so easy to make! As others suggested, I greased the ENTIRE muffin pan so nothing would stick to the top. Added 1/2 teaspoon of vanilla and baked the muffins for 25 minutes on 350. I made one batch, but only used half of the streusal topping since there was a lot. Will save the other half for the next batch, which I WILL be making very soon! Thanks for a delicious recipe! Oh, I used frozen blueberries (it's the middle of Jan...where can I get inexpensive fresh one???) and I think it works just fine. Will try fresh ones when they are in season.

Cha Cha's White Chicken Chili

Reviewed: Oct. 7, 2007
Love, love, love this chili! It is my new favorite dish, and it's so easy! Did not put in jalapeno peppers or the cayenne powder since I don't care for really spicy things. Pureed 3/4 of one of the cans of beans to thicken it up. For chicken, I cut up the meat from one rotisserie. Delicious!

Roasted Lemon Herb Chicken

Reviewed: Jul. 25, 2007
So delicious! I had never made a whole roasted chicken before and I was so pleased with the ease of this recipe. I did not have mustard powder, so used 1 Tablespoon of dijon mustard, mixed that with all the spices, then rubbed all over the chicken. Stuffed the cavity with lemon, garlic cloves, and onion. Baked the chicken in a pan with quarted potatoes, squash, and carrots. The veggies took on the flavor of the chicken seasonings. The meal was just great! Will definately make more often.

Cream Cheese Pound Cake III

Love this recipe! Very moist and dense. Am making my third batch as I type! When cooled, I slice the cake and wrap each piece in tin foil so there's always a piece ready for me to nibble on!

Barbequed Marinated Flank Steak

Reviewed: Jul. 7, 2007
I was salivating just making the marinade--it smelled soooo good!! Marinade gave the meat a nice flavor, but next time I will definately marinade overnight instead of just 8 hours. Used fresh grated ginger root instead of powder--I think it really makes a difference. Can't wait to make again!

French Toast Souffle

Reviewed: Jul. 7, 2007
My husband and I really enjoyed this dish. Only used 6 eggs, 3/4 cup syrup, no half and half--increased milk instead, and I baked this about 20 minutes longer to be sure the middle was not soggy. To also avoid sogginess, it helps to really stir up the bread cubes with the mixture before putting in the pan. Served with bacon and strawberries. Had a few pieces leftover so froze them to enjoy another weekend!

Sour Cream Coffee Cake III

Reviewed: Jul. 7, 2007
Delicious--and even better the second day! I whipped the butter for a while and slowly added the sugar--then whipped that for a while longer. Made the cake the consistency I like. Pretty much made as is, except cut sugar to 1.5 cups (don't like things that are too sweet) and increased vanilla to 1 teaspoon. It's a very moist cake and so easy to make. Thanks for the recipe!

French Toast Casserole

Reviewed: Jun. 28, 2007
Tastes just like...french toast--just what we were in the mood for. Did not put in sugar, used 1/4 cup maple syrup instead. Also, baked in 9x13 as suggested by others so the mixture wouldn't be soggy. In fact, it was a bit dry for me so next time I may add more liquid. Will definately make this again! Delicious!

Hamburger Cheese Bake

Reviewed: Jun. 28, 2007
If you like cream cheese, you'll like this recipe. Very easy to make. Added worstershire sauce, beef boullion cube, and onions to ground beef. Also, only used half of the pasta (8 ounces) as the bottom of the casserole. Layered cheese and half of sauce/beef mixture then put chopped veggies on top (1 carrot, 1 zucchini, 1 cup each of steamed broccoli and cauliflower) then put other half of sauce/beef mixture. But that's just us since we like veggies in our main meals. Bake for about 45 min to get the veggies cooked.

Maple Salmon

Had my doubts about the maple syrup, soy sauce, and garlic...but it turned out wonderful! It was a nice light flavor and very tasty--complimented the salmon nicely.

Veggie Stir-Fry

Reviewed: Jun. 13, 2007
Very delicious and simple. I used zucchini, onion, carrots, and broccoli for the veggies and added chicken breast for some protein. Also, I put in some ginger powder for an extra taste. I love the sauce because the flavor is not overpowering. Delicious!

Mandarin Beef Stir-Fry

Reviewed: Apr. 5, 2007
I thought this dish was extremely flavorful and delicious! My husband and I really enjoyed it. Just a few suggestions--use a low sodium soy sauce for a less salty flavor, and put the sliced oranges in just at the end, right before you serve (they fell apart for me because they warmed on the stove too long). Very tasty meal--will definately make again!
