About this Cook
I've been a stay at home Mom for 8 years but am now going through a divorce so I'm job hunting and getting ready to become a single Mom of two beautiful boys who are also picky eaters.
My favorite things to cook
Chicken, beef, casseroles, Crock Pot meals, Easy dinners with not too many ingredients. Nothing too difficult or time consuming. Money saving meals. My family loves bacon, mushrooms, and cheese so if a dish has one or more of these, it's usually a winner.
My favorite family cooking traditions
For holiday family meals it is my job to make the Pineapple Casserole at Easter and the Greenbean Casserole for Thanksgiving and Christmas. Easy comfort foods. I love my Crock Pot for our favorite ham, corned beef, and chicken recipies.
My cooking triumphs
A taco dish that my kids actually ate, a pork chop recipe that my in laws loved, and a chicken enchalada recipe that my Mom really liked, and she never eats Mexican.
My cooking tragedies
I've had quite a few. I usually have a cooking tragedy when I have to leave the kitchen to deal with my kids and I end up burning something. I've been known to set off the smoke detector when broiling something... nothing has ever caught fire though!

Stout Steak
My husband loved this recipe. I used a bottle of Guiness Extra Stout. Personally I would give it 2 maybe 3 stars, the flavor was OK, but the smell was overpowering. My husband really wants me to make this again, but I'm going to wait until he can grill outside so my kitchen won't smell as much. My hubby thanks you!

Black Pepper Beef and Cabbage Stir Fry
I didn't think I would enjoy this recipe as much as I did. Husband said I could make it again so I'm adding it to my recipe box. I used onion and mushroom added to the stirfry. Very good and easy

Becky's Chicken Salad
Great recipe! I made it for my own birthday lunch that I had my family over for. Used canned chicken but didn't add the extra salt. Also used pecans instead of almonds. Everyone loved it. Very good on a buttery croissant. Yum!
