I'm a married father of 3. I enjoy cooking because it's a convenient way to be creative. I also do some painting, but I enjoy cooking more. Paintings are nice, but not everyone appreciates them. Everyone can enjoy food.
My favorite things to cook
In the last few years, I've gotten interested in my herritage, and have been scouring the internet and other resources looking for American Indian recipes. I found a few, which are delicious and simple, but still very limited. Some of them have also been altered for modern day ingredients. I try to figure out how to cook these dishes using what was available hundreds of years ago. The resulting flavor is completely different when I succeed.
My favorite family cooking traditions
I don't think there needs to be a holiday involved to have a great meal. One of my favorite dishes to cook for a large group is roasted turkey with a rice & sausage stuffing I came up with.
My cooking triumphs
I created my own barbecue sauce and my own hot sauce that people keep requesting from me.
My cooking tragedies
Most of my failures involve baking. I once made a loaf of bread where the yeast must have been dead because it didn't rise and was as dense as raw cookie dough.

Easy Tuna Casserole
Finally, a tuna casserole recipe with no mushroom soup! I'm deathly allergic to mushrooms and finding a recipe that doesn't use them is a refreshing change. I personally don't use any soup for my casserole, but mine isn't easy either. Kudos!

Curried Honey Mustard Chicken
I don't obsess about lowering the fat in everything I cook, so I ignored the previous reviews that cut down on the amount of butter and followed the instructions. If whisked well, a good emulsion forms and the butter is incorporated into the marinade properly. Olive oil does not create the emulsion properly and distorts the intended flavor. The results were excellent, but I found that the marinade overpowered the chicken. On my second attempt, I added a half teaspoon each of nutmeg and sage, which enhanced the flavor of the chicken and balanced the recipe. Overall, very good!
