Beth's Orange Cookies

Pretty Good! As others have mentioned, the cookies themselves are not very orange-y. I add a teaspoon or two of orange extract to pump it up a bit. Rather than ice these cookies I dip them in dark chocolate (also with orange extract). They are SCRUMPTULESCENT! I didnt have any shortening so I used butter instead, otherwise folllowed the recipe.

Cranberry Sauce Extraordinaire

I gave this 4 stars because had I followed the recipe exactly, the sweetness would've been overwhelming! I used only 1/4 cup of sugar and it was perfectly tangy and sweet! I also used orange juice instead of water for a bit more punch, and walnuts rather than pecans simply because that is what I had on hand. But everyone who tried it liked it! It wasn't very appetizing-looking, but I talked a lot of people into it and they really liked it. Great with the Thanksgiving turkey :)

Greek Slow Cooker Chicken

I made 2 minor changes: I only used about 2 tbsp of oil (adding a touch more water), and we didnt bother to skin the chicken. The skin helps hold moisture in and it's easier to peel the skin off during the carving, rather than when it's raw. This was EXCELLENT! The overall flavor was pretty light, but not bland. There was a bit of lemon, but my husband and I thought it was just right. We drizzled a little juice on the chicken before serving, and I'm freezing the leftover juices for soup or rice another day. It's so good! When I got home from work the whole house smelled great and the dog was sitting by the counter just staring at the slow cooker! I felt bad that she had to smell that awesomeness all day, so I gave her a tiny taste and she just went nuts, she loved it! Excellent recipe for the whole family :D

Lighter Banana Muffins

These turned out pretty good! As others said, the texture is a little on the chewy side and stick pretty badly to the paper, but given that they're almost fat free I'd say that's all right! They taste great! I followed others advice and added about 1/4 cup milk and 1/4 cup applesauce, cinnamon and vanilla. Next time I'll add some ground flax for that nutty flavor and fiber. They're dense and hearty and taste great. Good choice for more health-conscious bakers!

Indian Chicken Curry II

Maybe I just don't like curry that much, but something was definitely missing from this recipe. Something needed to balance out the curry and yogurt flavors, I thought they were too strong. Some sauteed mushrooms might add a butteriness that would enhance it...? I also thought it was too soupy, next time I'd cut out some of the yogurt to reduce the soupiness. It was pretty good with some pita bread to sop up the remaining sauce! That part was real tasty.

Sausage Casserole

Excellent base recipe! I followed others' recommendations, used 8 eggs, and pre-cooked the potatoes and onions. I diced the potatoes rather than shredded just because I didn't have my shredder on hand. The first time I made this (for a Friday in Lent) I omitted the sausage and added mushrooms and spinach. I also added a little salt and a bit of pepper. This was so great, my whole family was asking for the recipe! The second time I kept to the original recipe but added leftover spinach. Really really good, thanks!

Sangria Ham

We used our slow cooker to create this delicious dish! While the slow cooker is simple and easy, you dont get that sweet crunchy outside coating of glaze. However we took the leftover liquid and boiled it down, added some cornstarch and served as sauce. So good!

Artichoke Mashed Potatoes

It was a tad dry for how I like mashed potatoes, so with a touch extra liquid this is a 5-star recipe! Such a simple side dish, and with potential to be far less fatty than mashed potatoes without sacrificing flavor! SO good!

Addictive Sweet Potato Burritos

Really good recipe! To be fair, I eye-balled all the spices, but I aimed for what was reccommended and I thought it could use a little something more. I added cilantro and some chipotle sauce and served with sour cream. The bean mix was too watery, so next time I'll use veggie broth and cut it in half. Very filling and really tasty, nice to do something a little different!

Award Winning Peaches and Cream Pie

Five stars for flavor, four for directions. I had some trouble with this recipe, my "crust" was like cake batter and never fully cooked, even though I cooked it for 15 minutes before assembling the peaches and cream. It tasted absolutely wonderful anyways! I'll have to read more reviews on how others dealt with this.

To Die For Blueberry Muffins

WOW these were SO good! Now, I attempted to make a bread loaf out of this instead of muffins, it did not work out real great. I baked it at 350 degrees for almost an hour and a half and the center top was still undercooked, but the part that was cooked is phenomenal! WOW! I did add a tiny squirt of lemon juice and a teaspoon or two of vanilla. So good! Since it was a loaf I only needed 1/2 of the crumb topping. SO good, definitely will make again!

Bread Machine Pizza Dough

AWESOME AWESOME AWESOME! This was a great basic dough recipe! I used Honeybrown since its a tad sweet and I added minced garlic, basil, parsley, pepper and parmesean cheese. FANTASTIC dough, will make again and again and try new spices! My only note of caution: Our pizza was done cooking in about 15 minutes, probably because we used a cookie sheet, so just be watchful of cook time.

Roasted Butternut Squash and Garlic Lasagna

AS is, I give this 4 stars. The only change I made to the lasagna recipe was adding fresh basil. I poured a LITTLE bit of water over the top noodles, since others mentioned they didnt cook all the way, maybe 1/8 cup? VERY little, but enough for the noodles to have something to absorb and they were great. FOR 5 STARS: On the side I made a mushroom sauce, and tried both without and with the sauce spread on top. The sauce made this OUTSTANDING!! 5 stars for sure! The savory mushrooms went SO well with the sweet squash. I got the idea from a restaurant that made butternut squash/mushroom lasagna, the butternut squash was like the cheese and the mushroom was the sauce, and it was made just like regular cheese lasagna. AMAZING I love it. Despite being a little labor-intensive, I will definitely make this again :D

Corn and Crab Bisque

WOW this was amazing! I pretty much followed the recipe exactly, except I only had 1/2 the amount of crab available (I thought it was sufficient, more crab would be nice but it was enough) and used 2 cans kernel corn and 2 cans creamed corn. I followed others advice and washed the crab meat, and it kept it from getting that super fishy flavor. I'm eating the reheated leftovers now for lunch and WOW! FANTASTIC! Great spicy flavorful kick!

Terrific Turkey Chili

EXCELLENT!! I read the reviews and added 2 things: beans and corn. That's it! We doubled the recipe for a party, but only used 2 zucchini since they were fairly large, and I think it was plenty. Chili just isn't chili without beans, and I LOVE corn, making this my absolute favorite chili ever. Its got a good bit of spice and tons of flavor. Sour cream and cheese on top, you can't beat it on a cold fall/winter day!

Glazed Meatloaf I

WOW really good! I followed others advice, used 3/4 cup bread crumbs rather than slices, onion rather than onion powder, a dash of hot sauce in the glaze, and I didn't have any mustard on hand but it didn't matter, SO GOOD! Really, I never liked meatloaf as a kid. This was great, my fiancee and I will definitely make this again. :D

Chicken and Dumplings III

I thought this recipe was a great starter, but really boring as is. Excellent idea with the biscuit dough! Came out amazing! I used one can of cream of chicken and one can cream of mushroom, wound up adding lots of veggies and some extra spices to this to pump up the flavor and make it more interesting.

Artichoke Spinach Lasagna

As is stands it wouldve been a 4, but I made some modifications to this recipe which in my taste brings it to 5 stars: Not a big thyme fan, so used fresh basil. I know this is more a veggie lasagna, but ya need cheese! I added a layer of cheese mix (10 oz ricotta, 1 egg, some salt, pepper, parsley, oregano and basil w/ the mozzarella) where the mozz was, I didn't pre-cook the noodles so they would soak up the soupiness that other reviewers mentioned. I also layered differently: noodles, cheese mix, sauce mix. (putting a thin coat of plain sauce under the first noodles, so they won't stick!) My fiancee and friends really liked this! Very good!
