I love to cook, but I only really have time to try new, fancier recipes on the weekends, since I work full time and am a part time student at night.
My favorite things to cook
I like to cook anything with southern origins. My mom is the best southern cook, and I want to raid her recipe collection! I get special gratification from making something that is not only delicious, but also good for you.
My favorite family cooking traditions
Anything my mom makes is my favorite food. I have started helping her with holiday meals when I go back to South Carolina.
My cooking triumphs
I make a mean lasagna. I also have perfected a pulled pork sandwich recipe with mustard based barbeque.
My cooking tragedies
Let's just say, you probably should be very careful when buying fish from a supermarket when you live in the mid-west!

Blue Cheese Crusted Filet Mignon with Port Wine Sauce
This is soo mind-blowingly delicious! I made this for my boyfriend for Valentine's Day and we both absolutely loved it! This is the best way to cook a steak. I used bone-in ribeyes instead of filet mignon. My boyfriend and I decided that this will be what we will have for Valentine's Day every year, instead of going to an expensive restaurant.

Awesome Chicken Noodle Soup
After making this recipe, canned chicken noodle soup will never quite cut it again! I froze a few servings of the soup for later. I used the lemongrass in a tube that they sell in the veggie section at the grocery store, since lemongrass is somewhat hard to come by in this area. I also cooked the egg noodles in a separate pot before adding them to the soup, and I'm glad I did, because there didn't seem to be a whole lot of broth in relation to the amount of chicken and noodles. I thought that this was a great recipe and it's just nice to know you made the whole thing "from scratch."

Jamie's Minestrone
This turned out pretty good. I think that the carrots and celery need to be sauteed a little longer before the other ingredients are added, because I had to let the soup simmer for about 1 1/2 hours so they were soft enough. By then, my zucchini had turned to mush. I thought it was tasty, though. Especially for being so healthy!
