About this Cook
I'm a married mom of two who recently became a full-time domestic engineer (by choice). Everyone always loves the food I make and I tend to be the one counted on to bring the really yummy stuff. I don't know that I'd call myself an expert but for sure better than intermediate. I like both cooking and baking although I find baking my gratifying. Who doesn't like dessert and when you spend time baking it's usually not gone in ten minutes like the gourmet dinner you spent hours on is.
My favorite things to cook
I can't choose a favorite but there are lots of things I really like to make. Lately I've been into trying out new chinese, thai, and indian dishes. I love all kinds of comfort food and making cookies, brownies and cheesecakes just to name a few.
My favorite family cooking traditions
My family background is English so having a traditional trifle after Christmas dinner(along with all the other pies and squares)kinda stands out.
My cooking triumphs
Duplicating my favs from restaurants. Like the new chicken and gnocchi soup from Olive Garden and the Honey Chipotle Chicken Crispers form Chili's. The cripers are bang on and the soup is pretty darn close.
My cooking tragedies
The easiest thing...sponge toffee. But only on my first three attempts. You have to heat the sugar to hard crack stage. The problem being the temperature climbs so fast at the end that when you get to hard crack it's to late. It's burnt. I took a few tries but I learned to stop at least five degrees earlier. Then chocolate coated it and it was fabulous.

Fluffy White Filling
I didn't want to rate this seeing as a changed it too much but wanted to share my experience. Since so many complained of the shortening taste I chose increase the butter and decrease the shortening to about a 65/35 ratio as opposed to 50/50. I also used regular sugar which I turned into powder in my mini processor because I wanted the sweetness but not the grainyness. Excellent vanilla is important and I used the white kind which gave me pure white filling. I had some open evaporated milk in the fridge which I think was to old so I used vanilla flavored coffee cream because I didn't want to use milk and that's all I had. The end result was quite nice and I used it to pipe into the center of my blond two bite brownies which sank in the center while cooling. So thanks for the starter recipe.

Sun-Dried Tomato Dip
As written the recipe only yields 3 stars. I love garlic and always add more but didn't here and it was strong. I only made a half batch and it was tons. So with one clove of garlic 4oz of cream cheese and half of everything else it was lack except in the garlic flavour. This is a sun-dried tomato dip with hardly any sun-dried tomato taste. In all I used a 1/2 cup of sun-dried tomatoes in my half batch when the original only called for a 1/4cup. That's for times more. Then it was great and everyone loved it though it was still heavy on garlic.

Whipped Mashed Potatoes
The most thing to know is that potatoes are like pasta. You should always generously salt the water you cook them in. Everything else about this recipe I thought was pretty standard.
