Shirazi Salad

I love how healthy & delicious this is !!! I added a good handful of minced fresh mint & about half a handful of minced fresh italian parsley. I topped with feta. I recommend that you serve with a slotted spoon &/or place in a different bowl (after draining) before serving. I accompanied this with baked pita triangles.

Pita Chips

Excellent recipe. Yum ! I brushed my pita triangles with olive oil intended for basting in that it was already infused with herbs. I added extra dried basil & a sprinkle of sea salt to each triangle. I will definitely make this recipe again.

Delicious & super easy. I used it on Sam's Famous Carrot Cake...What a hit !!! I agree with others that this would be phenomenal on pumpkin or spice cakes, muffins, etc...too...YUM !

Sam's Famous Carrot Cake

Oh my goodness !!!! This was the ultimate best carrot cake I have ever had...and my guests agreed. As others recommended, I used Cream Cheese Frosting II. It was equally delicious. I used two 9 inch cake pans. The cook time was approx. 45 minutes at recommended temperature. I sprinkled cake with crushed & whole pecans. This was a very tasty & attractive way to serve the cake. It really dressed it up. Will continue to make this cake over & over again. However, next time I would like to try a more healthy version utilizing apple sauce verses vegetable oil. I'll let you know how it turns out...

Pollo Fajitas

I was little concerned seeing Worcheshire sauce & soy sauce - wondering how it could taste like "fajitas". It was really tasty. I added 2 tsp of chili powder instead of 1 to make it spicier. I really liked that. The chicken also carmelized well. Served on a hot fajita skillet & drizzled with lime juice instead of lemon juice. Lime just goes so much better with Tex Mex. I recommend this recipe to others.

Herb Roasted Pork

Excellent dish ! The glaze/sauce was absolutely delicious. Because of how yummy it was, I will double the amount of sauce I make next time. I used a 3 lb. pork loin that was done in 2 hours. I definitely agree with the "asian" flavors and the sides should complement that. I will add sesame seeds to the glaze next time. A definite do again. Thank you.

Best Hot Crab Dip

This was a very tasty & popular appetizer. I used 2 cans of lump crabmeat & 2 cans of backfin crabmeat. Next time. I would probably do entirely all lump meat. I served the dip in a bread bowl with crisp crackers. I did struggle with the dip being a little too runny & I had difficulty with it browning nicely on the top. I resorted to broiling it for the last 5 minutes. Overall, this is a definite do-again. Thank you.

The Best Doggy Biscuits!

I followed previous recommendations: I replaced water with organic chicken broth, slightly reduced the amount of salt, added parsley & made them like you would peanut butter cookies. My dog loves them. They are quite chewy & I believe next time, I will cook them a couple minutes longer for a crunchier texture. My Bishon loves them. I will definitely make these again.

Apple Stuffed Chicken Breast

My recommendation is to make sure you brown the chicken enough. If you don't, it's not a very attractive dish. I found this recipe to be yummy but not as flavorful as I would have liked. I think it would have been more successfully executed if the outside of the chicken was breaded & baked, instead. Regardless, it was a pleasing dish.

Roasted Brussels Sprouts

Pretty good. Definitely the only way brussel sprouts should be served. I also tossed in baby carrots & red onion with the brussel sprouts. It is was really tasty & colorful with the 2 other vegetables added.

Spiced Sweet Roasted Red Pepper Hummus

Very yummy. I loved the smokiness of the roasted red peppers. Next time, I will add a couple tablespoons of raw jalapeno - to bring it a little more kick. I garnished with chopped parsley & served with triscuits. I will NEVER buy hummus ever again.

Chicken and Black Bean Chili

This is a very delicious chili. I loved that it contained chicken for a nice twist and the 2 types of beans added nice color with the corn & peppers. Very colorful. I happen to enjoy a very spicy chili so I added about 1/2 tbl. more chili powder, 1/2 tbl more cayenne pepper, 2 diced jalapenos & 1 tsp more cumin powder. I also found the chili to be a little too runny because of all the water. I simmered for an extra 20 minutes and it was still "soupier" then I prefer. Next time, I would add 3 cups during the first step adding water in the recipe but I would only add 1 cup in the second step adding water in the recipe. I served it by topping with sliced jalapenos, sour cream, shredded mexican cheese & chopped cilantro. Will make again...

Banana Chip Muffins I

I really felt something was missing in this recipe. They didn't taste bad, just plain. Perhaps if I make this recipe again I will add more chocolate chips, chopped walnuts & toasted coconut to the top. I made these muffin using muffin cups, moved baking rack to the middle of the oven, and only baked them for 18 minutes (not the recommended 20 - 25 minutes). Next time, I would cook them in even less time because these still turned out with darker bottoms which results in a "chewy" or "tough" texture.

Garlic Mashed Red Potatoes

Very Very yummy. I did add about 4 tablespoons of chopped fresh basil, as well as some dried onion flakes & kosher salt. I would highly recommend this recipe and will be my own mashed potato recipe for the future. **Add the basil - it's super great that way**

Surprise South Beach Mashed 'Potatoes'

This recipe was okay. I added minced garlic & fresh basil. I mashed it with a potato masher because I don't like my mashed potatoes that are too finely mashed. This recipe was a little watery.....I did added grated Reggiano Parmesan cheese. .... Definitely needed...

Easy Hummus

Super yummy, healthy & easy !!! A real winner. I used 3 jalapenos, the recommended lemon juice & cumin, 1 tbl of minced garlic, 4 tbl. of garbanzo bean can liquid and 1/2 tsp. of paprika. I think this is such a tasty & inexpensive alternative to the high fat, expensive store bought hummus. I used the Magic Bullet to blend the ingredients.

Zucchini Bread IV

Very yummy & moist. As so many other reviewers mentioned, I did top the zucchini bread with brown sugar streusal which made it very coffee cake like....I am going to serve it tonight warmed slightly with vanilla ice cream. I used homestyle apple sauce instead of oil. That made it healthier & very moist. I also added a tsp. of nutmeg & a handful of raisins. Also, I used whole wheat flour which made the cake a little darker in color but healthier. I love this !!!! SUPER YUM !!!!
