Asian Lettuce Wraps

Two thumbs up from my picky kids & they liked it so much they took it to lunch the following day! I used a half lb. ground turkey and half lb. ground pork mix, which kept the meat moist & flavorful. I also minced fresh ginger and let it cook with the onions, and used low sodium Asian sauces. Very easy to prepare & ready in a flash, this recipe will definetely go into our weeknight rotation.

Slow Cooker Carnitas

Everyone who ate this took one bite and declared they'd died & gone to heaven. I didn't change a thing to the recipe but I might make 2 the next time just so I have more leftovers. We ate this over rice, on tortillas, as a nacho topper and cold out of the storage container with a fork. Delicious every time.

Pumpkin Bread IV

This was fantastic! I divided this into a large loaf (1 hr bake time), a small loaf (45 min bake time), regular sized muffins (30 min bake time) and mini muffins (15 minute bake time). All were delicious. I also mixed up the toppings, adding chopped pecans to some and drizzled powdered sugar glaze to others. I had neighbors for coffee & everyone, kids included, loved them. I had 4 requests for the recipe after the first batch! I'm not a very good baker, but this recipe was easy & will definetely be a repeat recipe in my household!

Pumpkin Fluff Dip

This was very easy to make & good. If you don't like pie crust, this recipe combines the flavor of pumpkin pie and whipped cream into one. I combined with graham cracker sticks & there was nothing left.

Easy Chicken Rice Casserole

This was very good, but I followed the advice of some & added onion soup mix & thought it was too salty. The 2nd time I made some changes, I only used 4 breasts, 1 can of cream of chicken soup, 1 1/2 c. of milk, added 7 oz of canned mushrooms, whole grain brown instant rice, 1 pkg of Knorr Fine Herb soup mix & left out the season salt entirely. It added a great deal of flavor & was not as salty. My picky son devoured it & we'll continue to make this a lot as I've revised.

Garlic Chicken Fried Chicken

This is sooo good, that my family prefers it to the friend chicken recipe that has been in my family for years. I haven't tried this recipe with a full frying chicken yet, because my kids don't even care that they're not able to eat a leg (their favorite) and I like the ease of using breasts.

Jam Filled Butter Cookies

I used to make these as a kid & this recipe is as good as I remember. Don't make my mistake, as my fingers are a good deal larger than when I made these as a kid. I made my divits too large and as a result overfilled the jelly on the first batch. Make little divits & skimp on the jelly & you should be fine.

Easter Breakfast Casserole

My mother-in-law is allergic to gluten so this recipe has served us well on many a get-together. I mix it up with Mexican Velvetta & sausage & salsa on top with melted cheddar & sour cream on the side for Mexican flair.

Slow Cooker Chicken Taco Soup

This was a great, easy recipe that I'll make again. My changes were: 2 cans of 14.5 oz Red Gold diced Tomatoes with Chipotle, 1 an (4 oz) green chilis, 5 small chicken breasts. I used Yuengling lager & the flavor was awesome, but our kids didn't like it that much. Leftovers were very, very tangy, still good, but next time I might leave out the green chili's. This would be a great super bowl party recipe as it's more like chili than soup.

Garlic Cheese Grits with Shrimp

This recipe would probably have been 5 stars if I had used better shrimp. I made this on the fly & used frozen, which watered down the sauce way too much. Other than that, it was very good. Like another reviewer I could not find the garlic processed cheese so I used a Queso Blanco (white Mexican) Velvetta & it was GREAT. My husband doesn't like grits & he ate seconds, commenting that the added spice really made the whole meal taste great. Next time I'll use better shrimp, but we'll keep the queso cheese grits.

Cherry Crunch

After reading other reviews suggesting 2 cans of pie filling, I realized I only had apple pie filling. I used what I had & it was a great substitute. My neighbors all came over for apple crisp ala mode & everyone enjoyed it. I can't wait to try the cherry version next time. Good flavor & texture. Delicious. This will be made often.

Grandma's Chicken Noodle Soup

This was a very flavorful soup recipe without all the work. We'll be eating this regularly & I'm using this in my neighborhood soup exchange. My changes were: added 1 cup chopped carrots, used a rotisserie chicken & added all the drippings into the broth, added 1 TBS of Spice Island's Savory Blend spice mix (I got it at Sam's & can't live without it!), added 1 cup more noodles for my 2 & 5 year old kids. Great flavor. Easy & fast prep. Smiling faces at dinner. What more can you ask for?

Easy Homestyle Green Beans

These beans were flavorful & tasted like they sat on a stove cooking all day. My kids loved them & so did my husband. This is a keeper that I'll use for those quick suppers that I need to put together at the last minute. By the way, I used no salt added green beans.

Fantastic Lemon Butter Fillet

My husband & I eat a LOT of fish so when I saw all the great reviews on this cod dish, I thought it would fit the bill. I made it as it is written & we both thought that the lemon pepper totally overpowered the fish. We threw the rest out.

Buttery Spritz Cookies

Best spritz cookie I've ever eaten. I added 1 tsp. extra vanilla & left out the almond extract. The dough was still a little too tough to push through my electric cookie press, so I added a little bit of water to soften it a bit more. I'm not a great baker, but that seemed to work beautifully & my family enjoyed the results!

My Kid's Favorite Pork Chops

Very good. I added worchestershire & some A-1 like another reviewer (didn't have any brown sugar but I'll add next time). I also used Miller Lite beer & it was great. I put this in the crockpot on high for 4 hours using 4 porkchops. It was falling apart & very tender by dinner time. The only thing I would do differently is to double the pork chops. We had plenty of the BBQ sauce leftover & I wish I had more meat to shred & use for leftovers the next day.

Chicken Cordon Bleu II

This is my husbands favorite dish & he loved this version the best of all. It was easy to make in comparison to other recipes for the same thing & I didn't change a thing. Even my picky kids ate it up like it was candy! The leftovers were gone by the next morning and no one has confessed to being the midnight muncher.

Slow Cooker Italian Beef for Sandwiches

My husband loves this recipe. I served it at our Superbowl party with roasted red peppers, onions & sweet pepper relish as toppers & it was a big hit. Everyone loved it & it was something different from the standard chicken wing & chili fare.
