Fluffy Pancakes with Wheat Germ and Applesauce
I liked these. I agree with another reviewer, these are more thick than fluffy. I like thick pancakes, but I'm not sure it's worth it for me to get out the mixer. I would make them again, but w/o beating the egg whites (I wonder how I should change the recipe/ratios?). They are a little bland, but with syrup it hardly matters. My 16-mo-old doesn't seem to care. I did add some cinnamon, I think it was a good touch. And in answer to somebody's question, I think the oil in the recipe is just for frying.

Chickpea and Eggplant Stew
Disappointing. Having read the other reviews, I took some extra steps to add flavor - added basil too, used broth instead of water, used fire-roasted tomatoes, cooked in slow cooker... (omitted salami though, as we are veg.) Wasn't horrible, but still quite bland.

Apple Bars
Ditto with what many others have said. Used macoun apples but I think Granny Smith would have been better. Used 1/2 brown sugar, and double the apples - good suggestions. Again, more of a cake than a bar, but held it's shape when cut into squares. Best thing about this recipe? Simple, easy. My 4-y.o. helped me make it.
