Pork Medallions

These were good, but I would have liked it a little more tender. I also thought the "sauce" could've had a bit more flavor to it. This will be a good recipe to play around with.

Pecan Pie Muffins

Super easy to make and so good. They went quickly when I took them to church! Only problem I had was even though I sprayed my muffin liners, the muffins stuck to the liners really bad!

Onion Bake

Reviewed: Aug. 27, 2009
We just were not sure about this! It tasted great, but it was really weird to eat mouthfuls of 'soupy' onion! Bites with the bread were better, but I won't make this again just because it was kind of strange.

Pauline Werner's Beef Stew

Reviewed: Aug. 18, 2009
This was just okay. The meat wasn't tender enough after that short cooking time. We like our beef stew to be "stewy" not "brothy." So I found a hint on another cooking site, which worked wonderfully to thicken this up. It said to mix about 1/4 cup softened butter with 1/4 cup flour to make a paste. Then all you do is add about a tablespoon at a time to your soup until it it's as thick as you like. I didn't really think this stew was that great though. I think if I make it again, I will cook my meat in the slow cooker the day before.

Peanut Butter Pancakes

Reviewed: Aug. 17, 2009
I wasn't sure my girls would like these... they love my pancakes and usually we put pb on top of them, so putting the pb in the batter was a fun idea. They turned out great. I just had to watch them carefuly and I had to turn the heat down pretty low so they wouldn't get too dark. They cook a bit differently than my regular recipe.

Key Lime Pie VI

Reviewed: Aug. 17, 2009
Ugh! I've made key lime pies before using different recipes, and I have always enjoyed them. I did not think the flavor of this one was quite right. I didn't have any trouble with it setting up, but I just didn't like it.

Pecan Filled Cookies

Reviewed: Aug. 16, 2009
These were easy to make. I had no problem rolling the dough into little balls and I used the end of my wooden spoon to create the indention. However, I like my desserts sweet, and these aren't really. So, I sprinkled mine with sugar before filling, which I thought made them better (sweeter!). Also, I only baked them for 8 minutes so they'd be nice and soft... they turned out perfectly.

Patricia's Green Chile Soup

Reviewed: Aug. 12, 2009
I used a pound of chicken breast, which I cubed and sauteed with the onion. I also used about 1 3/4 cup of half & half. I put 2 cans of green chiles into my chopper to make them a bit finer, then I added another can of chiles which I didn't chop. I also added a small bag of potatoes to the soup. It was so good! My husband and I really loved the creamy texture. I will double the recipe next time, however, because between me, my husband, and our 3 older daughters, we ate every drop of this!

Pasta e Olio

Reviewed: Aug. 9, 2009
This was a nice variation from the usual vegetable sides we have. I just felt I needed to add too much too this to rate it higher. I added a lot more of everything but noodles, plus I generously sprinkled each serving with parmesan and romano before serving, and we all thought it could still use a little something. I will keep this recipe to play around with though.

Paprika Chicken with Sour Cream Gravy

I followed some of the suggestions of other reviewers and doubled the spices in the flour mixture. I cut up my chicken into bite size pieces before coating as well. Everyone at my house loved this... including my 3 picky eaters!

BUSH'S® Best Black Bean Soup

Reviewed: Jul. 30, 2009
A member of my small group brought this to church as a side dish one night... it was so good! I couldn't wait to make it, and I served it as a side as well. It is very quick and easy to make and it tastes wonderful. I added a couple of extra spoonfuls of salsa to ours. I like adding a bit of shredded cheese and a small dollop of sour cream to my bowlful to make it a bit creamier...mmmm mmmm mmmm!

Peanut Butter Fudge IV

Reviewed: Jul. 28, 2009
I like the recipe because it is easy and because it doesn't have that many ingredients or steps... it's fast and easy. However, I think it needed a more peanut-buttery taste. I will add more pb next time I make it.

Outrageous Chocolate Chip Cookies

okay, this was the first attempt my 11 year old daughter has made at cookies... this recipe worked marvelously! She asked for minimal assistance, only to stir actually, and they turned out very good. She made them exactly as the recipe stated too.

WOW!!! This was soooo good! I did not use carrots and I added a lot more celery and green pepper and it was really good. I will keep this one to make more often. Even my picky daughters ate it up :)

Leslie's Salty Grilled Potatoes

Reviewed: Jul. 9, 2009
I am giving this recipe 5 stars because I used the idea and the measurements, but I made them in a different way. I found it easier to use my hands to rub olive oil all over the potatoes. Then I dipped my hands in the seasoning and rubbed them all over the potatoes too. This gave me a nice even coating of salt, pepper, and garlic all over the skins. I put them on a baking sheet without foil, for a crispier skin, for an hour at 350. They were so good!!! I think next time I might just mix the seasonings right into the oil and use my hands to coat the potatoes to save a step! That way, halfway through baking, I could turn them and use a bbq brush to coat them again...mmmmmm!

Sloppy Joes II

Reviewed: Jul. 4, 2009
I only made a couple of small changes to this recipe. For starters, I doubled the sauce and added a little water to make it a bit saucier. I also substituted 1/4 of the ketchup for some Tastefully Simple Smoky Bacon Grill Sauce. Towards the end I decided it was a little sweet, so I added a couple dashes Chalula hot sauce. They were so good! My hubby liked them, and so did my kids. We hate the canned stuff and I am so glad I came upon this recipe!!!

Mashed Potato Cakes

Reviewed: Jun. 25, 2009
I like the idea of these, but like another reviewer stated, if your potatoes are creamy, these don't really form very well. I added a lot of flour and ended up having to just spoon lumps onto my baking pan. I also think they need a little more flavor. I think if I try them again I will add some crumbled bacon and cheese, and more seasoning.
