Kale Puttanesca

We receive lots of kale from our CSA and I'm always looking for new ways to use it. This is a great healthy dish that everyone enjoyed. I didn't have anchovy and the dish was fine without them.

Blueberry Walnut Salad

Yummy! I added some apple and you must toast the walnuts to bring out their flavor. I only had balsamic vinegar dressing and that worked well.

Baked Zucchini Chips

Great way to use up zucchini from our CSA. My 4 year old will eat these with some tomato sauce. It's a great healthy snack or side.

Cheese and Sausage Stuffed Zucchini

My family enjoyed this. The zucchini we received from our CSA was small so I cut up the zucchini and made the dish that way. It was easy and tasty.

Honey Mustard Grilled Chicken

We loved this recipe. We are big dijon mustard fans so this was right up our alley. I would make a little extra next time b/c my hubby likes to drown his chicken in the sauce.

Tomato Leek Tarts

This is a great way to use up leeks and tomatoes in the summer. It's a nice light meal. I would even add some finely chopped spinach and basil. Yum!

I made this pasta salad tonight and everyone loved it. I left out the ham b/c we do not eat it and I didn't have any peas so I added green peppers. I used low fat may and fresh dill from our garden. I thought it tasted like the cool veggie pizza without the dough. I will definately make this recipe again!

Chocolate Chip Cookie Ice Cream Cake

I made this recipe for Father's day and it was a big hit. I used oreo's for the crust. Then mint chocolate chip ice cream then another layer of crushed oreo's more mint chip ice cream and surrounded the cake with Keebler's Mint Wafer cookies (similar to girl scout thin mints). Loved it!

Play Dough Cookies

My 3 1/2 year old son had a great time making these. He only made one cookie and I was stuck making the rest. It was fun but the dough got soft very quickly. I would suggest working in very small batches or rolling all of the balls first then put them in the fridge and then make the cookie. Beware they are time consuming but worth it. We gave these away as end of the nursery school year gifts. The kids thought it was cool to eat something that looked like playdough.

Beet Salad with Goat Cheese

We received red beets in our CSA box this week. I never had beets before so I was anxious to try them. This salad was good but I think I may have put to many beets in it. Next time I would only put in 3 small to medium size beets. I used feta based on other reviews and liked it. I would make this recipe again.

Low Sugar Strawberry Rhubarb Crunch

This was good but I can definately see why most rhubarb recipes call for a lot of sugar. Rhubarb has a distinct tart flavor but I enjoyed it. Something different.

Yummy Bok Choy Salad

A great way to use up baby bok choy from our CSA. This salad was very tasty and light. Based on another review I added dried cranberries and sunflower seeds. Next time I would half the dressing part and add a sliced pear.

Coconut Poke Cake

I've had this recipe in my recipe box for a while. I was waiting for the perfect occasion to make it. This cake is delicious. It's very sweet but moist and light. I was hesitant to use all of the sweetened condensed milk and cream of coconut but I did anyway and I'm very happy with the outcome. I would highly recommend this cake. It's easy and holds up well.

French Dip Sandwiches

I don't usually eat red meat but ohhh my god this sandwich was great!!!! Maybe it's my pregnancy cravings but I loved this sandwich. I used a pot roast and broiled mozzarella cheese onto the bread. My hubby said this is a 5 star recipe. I will definately make it again.
