I was born and raised in the New Orleans area. I have been married for over three years now, and my husband loves to eat my cooking (he's not from New Orleans).
My favorite things to cook
I enjoy making cajun dishes,but I like to experiment and try different things. I also like to bake.
My favorite family cooking traditions
My dad enjoys cooking and grilling, and he and I are a mess in the kitchen together. We have a family recipe for potato salad that we call Daddy Boucheire (no idea how to actually spell it--pronounced Booshay) after Adam Sandler's movie, The Waterboy. It's great to be able to cut up with my dad in the kitchen.

My cooking tragedies
The first couple of times I tried to make the jambalaya, I doubled the recipe in one huge pot. Big mistake. Some rice never really cooked, and by the time it all did, it was more like mashed potatoes....The whole thing was pretty sad.

Crawfish Etouffee II
Being from the New Orleans area, I find the basic part of this recipe to be good. I don't use as much oil and a little more butter, and I add lots of cajun seasoning and a good bit of fresh garlic when I am sauting the vegs. I also double the recipe, and sometimes add much more of everything than suggested and it all cooks down fine. Many people say that tomatoes or the paste don't belong in the etouffe (it is more of a creole dish with the red sauce), but I always get phenomenal reviews when I make it. Then again, that's what cajun dishes are all about--just cooking all your stuff down with spice, and ya get what ya get!
