Sweet Potato Pie II
About this Cook
I'm an executive assistant who's very involved in my church. I love the Lord and I teach a Sunday School class, work in the church nursery and our church web ministry. I love to crochet & knit and spend time with girlfriends (shopping, watching movies, going out to dinner).
My favorite things to cook
Cooking tires me so I prefer one-pot meals (e.g., chili, red beans/rice, soups, stews, casseroles). I also don't have a lot of extra time to spend cooking, but I'd like to do (and learn) more.
My favorite family cooking traditions
My grandmother, mother, aunt & sister were or are all great cooks. Although I can make good food, I don't have a lot of time to spend on it. Hopefully, this website will help me to improve.
My cooking triumphs
My first apple pie was wonderful. Took it to a church meeting and everyone loved it.
My cooking tragedies
No tragedies really. Some of our best lessons come from our mistakes.

Crustless Spinach Quiche
Delicious! I took the advice of a previous poster and used eggbeaters & low fat feta cheese & made mini quiches in muffin tins. I also added 3 cloves of minced garlic and turkey bacon to mine. They made a mess of my muffin tins though, even though I sprayed them with Pam; maybe next time I'll try using muffin liners.

Boudreaux's Zydeco Stomp Gumbo
This gumbo did not taste the way I expected, so initially I was a little disappointed. But the more I ate (and there was a lot to eat), I began to appreciate the rich hearty flavor. Great comfort food. And the pepper gave it a really nice kick. If I make it again, however, I may try it without the beer and use a seafood stock instead.

Sweet Potato Pie II
This is the first time I've made a sweet potato pie. I wanted to see how I'd do on my own without asking my Mom how to do it. It's very, very good. But my Mom's pie still tops it. I was actually trying to make 2 pies, but came up a bit short on mashed potatoes. And although I didn't increase the ingredients to accomodate the extra potatoes, it still tastes great (not too sweet). It's so good I'm going to make it for Thanksgiving this year.
