Caramel Apple Pork Chops

Really good. I tripled the sauce as other reviewers suggested, but that's not really needed, unless you know your family wants to eat a lot of apples. Please make sure the chops are almost fully cooked before removing them to the oven to warm.

Easter Basket Cake

Cute idea, easier than others I've seen, and I really like the handle idea. That turned out well. But the ring on top completely fell apart when I tried to frost it. I followed directions, but I was just asking too much of that cake, to have its center cut out, placed on top of another layer, and then smear frosting all over it, including the inside hole. I don't know that I'd attempt this again--maybe a smaller hole, but that'd leave very little room for candy.

Strawberry Rhubarb Coffee Cake

I thought this was good, but not sensational. But served it to several ladies who were THRILLED to have a different use for rhubarb, so I've passed the recipe around quite a bit.

Slow Cooker Texas Pulled Pork

Wow, Wow, Wow. You will not believe how good this smells cooking and the eating is even better. I will mention that someone was concerned about too much vinegar, but while the vinegar is a bit strong at first, it cooks out and gives it a really nice tang. Used Sweet Baby Ray's molasses sauce, and I am not a big pork eater but could not stay away from this.

Sweet, Sticky and Spicy Chicken

Very easy & quick, so great for weeknight suppers. Couldn't believe it, but my school-age children really loved it, and they are NOT adventurous eaters. I did lighten up on the spice, but it's easy to adjust something like that to taste.

Cream Cheese Frosting II

Great base recipe to vamp off of. In addition to the vanilla, I added a little orange extract, plus about a tsp. of cinnamon to put on spice cake. Just right with some extra appeal.

Mocha Angel Food Torte

I felt like the frosting was just too much for angel food cake--too heavy, and it was hard to slice neatly. I'd almost rather just slice the cake, and serve with a dollop of pudding and some cool whip.

Pumpkin Toffee Cream Pie

Looked really pretty with the toppings as instructed, and pretty easy to throw together. I did the modifications suggested to pump up the spice flavor, but it was still lacking something "special". The pumpkin flavor really dominated; I didn't taste the butterscotch.

Quinoa and Black Beans

Well, my young boys didn't eat it (no surprise) but my husband and I and teen daughter thought it was terrific. No bitterness from the quinoa after a brief soak (10 minutes), very easy to make and to personalize with different spices or even add other vegetables. we'll certainly make it again.

Caramel Fruit Dip

Following other reviewers, I added more cream cheese and less liquid from the start, but found the honey flavor was dominant. So I added more cinnamon and caramel sauce, but then it was kind of bland, and I also thought the consistency was too fluffy, not sturdy enough. So then we added Peanut Butter! And that improved the flavor and texture. Next time we might just omit the caramel sauce altogether.

Apple Pumpkin Muffins

Big hit, very moist, the streusel makes them look very attractive. I reserve judgment on the apple--dicing them was too big, though they cooked just fine; not sure they really added anything to the taste. Use tarter apples? Shred them?

Ice Cream Cake

Chocolate cake, Reese's ice cream, cool whip, and Reese's magic shell topping. My children were very pleased, but I still felt like it was, well, just cake with ice cream and cool whip on top. it didn't seem to really become a cohesive something else. I will keep experimenting with the recipe. Oh, also I found the ice cream messy to work with. Softening it left it melty on the outside but too hard to be cut with string on the inside. A sharp knife run under hot water worked better.

Chocolate Orange Marble Cake

It's definitely attractive and moist. The orange zest....I don't know, it didn't really add enough kick to the orange part of the cake. The glaze was a great idea, I used orange concentrate since I don't keep orange liqeur in the house. But the cake still looked a little plain. I sprinkled powdered sugar, which helped, but I think a chocolate drizzle as someone else mentioned would be a good addition.

Quinoa Side Dish

Wow! I've always liked quinoa for the health benefits, but thought the taste was strong and slightly bitter. But the broth (I used chicken stock) and the herbs seemed to mellow it. We'll be having a lot more quinoa!

Fudgy Peanut Butter Brownies

Well, I didn't have high hopes for this, and I did notice that the texture was different from the classic brownie recipe I usually make. BUT MY KIDS LOVED THEM. They fought over them. So anytime I can get them to eat a dessert that is low-fat, I gotta go with it.

Crispy Fish Fillets

Wow, this was great. I used cornflakes, but I think panko would have been even better if I'd had any on hand. We used 4 oz. flounder fillets, not great in themselves, but tasted terrific with this simple coating. I did find that this wasn't enough mustard coating for my fish, so I would make more next time.

Bay Scallop Chowder

My husband, not a seafood guy, really grooved on this. I did have trouble with it looking a bit curdled, which I believe a previous reviewer had trouble with. I thought it was a little surprising to simmer it with the cream, since it oftens curdles--next time I would try simmering with the egg yolk, so it gets cooked, but then adding the dairy at the end and not letting it get to a simmer.

Quiche

Great! Really appreciated how quick it was. And as others have said, adaptable. I cooked it right away at 350 for 1 hour, and that worked well. I used colby-jack to suit family's preferences, and still tasted great. using milk instead of cream works wonderful and reduces a lot of fat. I will say that I put it in a 10" pie plate, and that was too big--the quiche was thin and didn't fill all the crust.
