About this Cook
My favorite things to cook
Christmas Cookies, Cranberry Pie, Pancakes, French Toast Casserole
My cooking triumphs
Cranberry Pie, every time!
My cooking tragedies
Once upon a time I made French Toast Casserole, but it turned into French Toast Flambe'. You see, I had used baking dish that just fit the bread when it was covered with the French Toast mixture. It hadn't expanded yet. In the oven the bread expanded, as an egg based mixture will, and the praline topping spilled over the edges. Usually I put a pan underneath to catch spills, but I was in a bit of a rush that day trying to impress my in-laws with their first made-by-me breakfast. About 30 minutes into cooking, my mother-in-law noticed smoke and flames in the oven. After an attempt to find my baking soda failed, the decision was made to snuff out the flames by shutting the oven door. In the end the casserole was saved, but the story of French Toast Flambe' endures!:)

Apple Chicken Slaw
Delicious! and quick too!! I had some leftover chicken and coleslaw so I thought I'd give it a try. I didn't have the poppy seed dressing on hand, but even without it, it is still good. I had some pecans, so I put those in too. Really good!!

Crustless Cranberry Pie
I have made this many times - each time delicious. The first time I made it cranberries were out of season, so I used a can of jellied whole cranberry sauce. I mushed it thoroughly. The pie turned out sweet and moist. Also, before baking I like to sprinkle some sugar and chopped walnuts on top to make it look even more pretty!
