Eggless Chocolate Cake II
I made this recipe as cupcakes and mini-cupcakes for a party with a little boy who is allergic to eggs- half the recipe made 12 cupcakes and about 18 mini-cupcakes. I added half a bag of semi-sweet mini chocolate chips, and they were so moist- my son and sister and I couldn't stop eating the minis! I'm planning to make some cream cheese frosting to go with these and I'm sure they'll be a hit at the derby party!

Sweet Potato Bread I
This was very good, though I made several changes. Just used 1 cup of brown sugar, 3/4c of white flour, 1c whole wheat flour, 1'4c ground flax seed, increased cinnamon to 1tsp, added 1/4tsp cloves, used about 1 1/2c mashed sweet potatoes (leftovers from dinner a couple nights ago), and didn't put in any nuts. It still came out sweet enough for us- as a matter of fact, my 2 1/2yr old son took a bite out of it while it was cooling on the kitchen table! I'll make it again, and probably substitute applesauce for the oil.

Apple Muffins
I feel like I used this recipe as a base since I modified it rather a lot, but it ended up so delicious! I used 1c ap flour, 3/4c whole wheat flour, and 1/4c flax seed instead of just ap flour, brown sugar instead of white (apples just mean brown sugar, I think), apple cider instead of juice, since that's what I had, 1tbs of cinnamon (based on other reviews and knowing my family loves cinnamon), applesauce instead of oil, and 1 huge Sonya apple that was probably more than 1 cup (and I didn't bother with peeling it). I baked it in a mini muffin pan for about 11 minutes and they came out moist and apple-y and delicious!
