About this Cook
I decided to join this site because I really want to learn how to cook a variety of dishes and I would like to generally expand my skills and knowledge in the kitchen. After finishing college and living in dorms for years, I am excited to have a kitchen and be able to cook with more than just a microwave!
My favorite things to cook
I've mastered a couple of recipes, including chicken stir fry (I love using my wok!), meatloaf, lasagna, baked chicken and veggies, an assortment of cakes, and blueberry muffins.
My favorite family cooking traditions
Green chile chicken enchiladas, red chile beef enchiladas, carne adovada, posole, lasagna, and Indian tacos. My mom is a wonderful cook and I'm trying to imitate her and become a pro at these recipes as well!
My cooking triumphs
It took me three attempts, but I've finally mastered a peppercorn chicken stir fry that is just to die for. It was hard to approximate the right amount of pepper in this recipe but I finally got it. I also make a fabulous meat lasagna with no-bake noodles that is just the right amount of saucy and chunky. Lasagna is my favorite food so I am very proud of this!
My cooking tragedies
The most horrific thing I've ever made was red enchiladas with ground beef. My biggest mistake was using a store bought generic brand of enchilada sauce, which turned out to be just awful and ruined the whole thing. It was a powdery sauce you mix with water and tomato sauce. I was disgusted with it to the point that I barely ate one enchilada and couldn't stand anything more. My boyfriend and cousin were so kind to eat a full plate of this catastrophe and they said the dish was not nearly as bad I made it out to be. I think they were just being polite. With the leftovers, I put a neon pink sticky note on the top that read: "TOXIC - do not eat!" My cousin took it to work the next day, and said the contents were devoured (people must have been STARVING to eat this mess). Lesson-learned: don't compromise a good homemade sauce for cheapy brands and think the outcome will be the same.

Gravy Baked Pork Chops
This recipe is simple to follow, and I made it with 6 thin cut pork chops and it turned out wonderful! I cooked this for my parents with green beans and red potatoes, and they rated it 5 stars --- and my dad is picky, so this says a lot! Very tasty.

Swiss Chicken Bake
This was good, a different kind of flavor with chicken. It was a bit chunky, though, and I even added more broth than the recipe called for. Perhaps I'll try this again and modify a bit to fit a smaller amount of food for next time.

Garlic Red Potatoes
It could have just been the oven I used at someone else's house, but these potatoes did not cook as much as I would have liked in the time indicated... and the parmesan turned funky in the oven. I would have waited on the cheese until just before eating. I ended up quick-cooking these on the stove after the oven didn't suffice. My boyfriend loved them, though. I will try this again, though, given the rave reviews!
