Apple Pie Smoothie

This smoothie tastes great and I can hide a veggie without my picky 2 year old finding out. I added a splash of vanilla extract as well and froze it for a nice snack. Thanks for the recipe.

Fabulous Zucchini Grinders

These were great, but even better the next day. I sauteed the zucchini with 2 cloves of minced garlic. I also toasted the bread with extra butter. Thanks for the recipe!!

Award Winning Soft Chocolate Chip Cookies

I absolutely love this recipe!!! The consistency is different from regular cookies - kind of spongy - but sooo good!!! I followed the recipe exactly. I refrigerated the dough before baking and since it makes so much I'll put the rest in the freezer to enjoy fresh cookies any time! Thanks for the great recipe!!!

Roquefort Pear Salad

I made this for a coworker's baby shower, which meant I assembled or cut everything the night before and only saved the pears and avocado for the day of the party. It was good, but I guess I was expecting more. I doubled the dressing like everyone recommended and while I got compliments for the salad, one person complained about too much garlic.

Zucchini Cakes

I baked these the first time I made them so I didn't feel guilty about eating it, but it lacked taste. The 2nd time I made this I panned fried it. Soooo worth the guilt! Be sure to squeeze the moisture out of the zucchini before frying. I had to "dry" mine out in the oven for a few extra minutes.

Three Cheese Garlic Scalloped Potatoes

I made this for my MIL's birthday. After keeping it warm in the oven for a while I found the provolone cheese to be a rubbery crust on top. This is best eaten the first day. My leftovers were too oily to enjoy.

Vegetarian Tortilla Soup

Yummy! I used 2 tablespoons of cumin as recommended by others and added a little ground coriander. I couldn't find the pepper/onion mix so I just chopped my own. Next time I think I'll try roasted the vegetables. Thanks for the great recipe!!

Easy Pesto

I didn't have any pine nuts or walnuts so I decided to try this recipe. I've never made a pesto without pine nuts, but I was pleasantly surprised. It turned out a rich, vibrant green color and was simple and easy to make. My almonds cooked in under 5 minutes so I would keep a watchful eye to make sure yours don't burn. I would also add the garlic one at a time and after tasting only add more if necessary. I ended up using all 3 cloves and it was a little too strong for my taste. I also added a couple of tablespoons parmesan simply because I love cheese and to cut down on the bite of the garlic. Because I was going to freeze it I decided to add a little fresh lemon juice to keep it from browning as suggested by other reviewers. I will definitely make this again. Thanks for the recipe!

Hot Artichoke and Spinach Dip II

I made this recipe based on REBEC1120's suggestions. This is definitely for garlic lovers. I think next time I'll try just one clove and use mayonaise like the original recipe recommended. I ended up having a lot of leftovers. Thanks for the suggestions though.

Chocolate Eclair Dessert

I love this dessert! I made it for Father's Day and it was a huge success. I bought canned chocolate icing but decided to make the icing recipe provided by BaysChick since I had all the ingredients. It was still a little on the sweet side so I would recommend adding 1/2 cup of sugar and then more depending on your taste. The icing also turned out a bit gooey because we ate it as soon as it was taken out of the fridge. Maybe let it sit at room temperature for a while before cutting into it. I will definitely make this one again. Thanks for the great recipe!!!

Barbequed Ribs

I made these ribs for Father's Day. Even though the recipe had several steps it was still pretty easy. The ribs came out tender and juicy. The sauce was a bit tangy so I did half the ribs with sauce and half with just the rub. My dad preferred the ribs with the rub alone. He also suggested wrapping the ribs completely in foil to grill. I will definitely try this one again. Thanks for the great recipe.

Blue Cheese Potatoes Delmonico

I made this for my boyfriend and I. Overall we enjoyed it but the first time I made it my sauce turned out like lumpy butter. My boyfriend who attended cooking school informed me I needed to temper the milk with the butter mixture before adding it all together. Next time I would do what others suggested and add more blue cheese and salt next time.
