Chile Verde II

Reviewed: Dec. 21, 2009
I'm rating this 4 stars b/c you do not need the broth! I used NO broth at all. I broiled the peppers, onions, and tomatillos until browned and blended them in the blender with the cilantro, cumin, garlic and salt. Then I poured it over a pork loin and let it cook on low in the crockpot for 9 hours. When it was done, it was still very watery so I thickened it. The flavor was excellent and the pork was falling apart. I shredded it and used it to stuff tamales. Unless you want it soupy, there's no need for broth since there's plenty of liquid with the vegetables.

This was great! Just enough pumpkin and spice. But I added more chocolate.

We liked the tofu part, just didn't love the salad components.

Broiled Tilapia Parmesan

Reviewed: May 10, 2009
It was a little greasy for me, but I think I went too heavy on the topping. I'll go lighter next time. But it was delish and even my kids ate it. Thanks for a simple, but good fish recipe!

Clone of a Cinnabon

Reviewed: Apr. 17, 2009
We loved these cinnamon rolls, but there was just too much cinnamon for us. It was almost overpowering--in a bad way. Next time I'll cut back on it a bit and then they'll be perfect!

Chantal's New York Cheesecake

Reviewed: Jul. 17, 2008
This was WAY too eggy--tasted like flan or custard. We ended up not eating it. Huge waste of ingredients. I don't know if it was something I did or the recipe itself, but I won't be making ths again. This recipe in no way tastes like New York Cheesecake.

Bodacious Broccoli Salad

Reviewed: May 2, 2008
Delicious dressing! But I made a couple of changes. I added cashews and raisins like some of the other reviews suggested. I also followed the other suggestions to only use 1 teaspoon of black pepper, which was more than enough (especially if it's freshly ground). Finally, I only added 1/3 c. sharp cheese. I want to be able to taste the other flavors, not eat a cheese salad with a bit of broccoli.

Baked Teriyaki Chicken

Reviewed: Feb. 22, 2008
I followed the recipe exactly and it was perfect. I tried chicken breast and chicken thighs and the breast meat was way too dry and hard to swallow. The thigh meat was juicy and fall-off-the-bone tender. Will definitely make this again.

Stir-Fried Shrimp with Snow Peas and Ginger

Reviewed: Feb. 11, 2008
I tripled the sauce and it was too much. Doubled would have been perfect. I like the flavor of the sauce. I didn't think it needed more garlic or ginger like the other reviews. I added water chestnuts for extra crunch.

Quick and Easy Monkey Bread

Reviewed: Dec. 25, 2007
I followed the recipe exactly, but I think it calls for WAY too much sugar. It was so much sugar that most of it didn't even carmelize and just stayed in chunks that hardened in the oven. We scraped it off and ate the rolls. My sister makes these by dipping the frozen rolls in butter, then rolling them in a cinnamon/sugar mixture. I think that hers is better than this.

Lemon Square Bars

Reviewed: Dec. 25, 2007
These were great and I like the filling better than the Betty Crocker recipe. It was firmer. I also like that the recipe makes a full 13x9 pan rather than a smaller square pan. Here were my commplaints: the crust dough was way too soft to push into the pan. I had to add some more XXX sugar to make it a bit firmer. Secondly, I added lemon zest since I wanted more of a lemon bite. And take the other reviewers' advice and COVER these with foil halfway through cooking. They brown really fast.
