Winter Root Vegetable Soup

This was very hearty and delicious. I added some fresh rosemary. I decided to try the soup without using vegetable or other flavored broth, just for fun. I used 6 cups of water because I added a lot of extra vegetables, like parsley root, mushrooms, and leeks. Cutting all those raw root vegetables is big job, and kind of dangerous! Also added some lemon pepper and cumin. It is great without the added cream, too. It would be easier to use Mrs. CMBG's roaster idea, but I forgot to try that method. Instead, I lined my roasting pan with foil and sprayed it lightly with oil, and after roasting, I found I was able to just pick the foil up and funnel the vegetables into the pot.

Almond Puff Pastries

Elegant and delicious. I think it might help to avoid getting any egg mixture on the outside edges of the pastry to maximize the puff factor. Trouble with this recipe is that when you bite into the pastry, the filling oozes out. I used a sweetened whipped cream with a little vanilla bean paste added.

Zucchini Casserole I

Had to make this in a hurry, so I simmered the diced zucchini for a few minutes before tossing everything together. Also had a lot of cherry tomatoes to use up, so I subbed those for peppers, and used panko crumbs, since I had no cornflakes. Also used some garlic, 1Tbsp. basil, and some bread crumbs and cheese on top. It was great! We loved it, and I think it would be even better to follow the recipe more closely. Next time, I plan to add some ripe olives, onions, and a few hot peppers. I was able to cook it in about 20 to 25 minutes in a convection oven preheated to 350.

Melon, Mango, and Avocado Salad

This was a hit. Pretty, colorful, and refreshing. Although it is involved to make, most of it can be prepared hours ahead and assembled at the last minute. This is the most interesting salad I've ever made or tasted. I put our salads in rather large margarita glasses, and it was gorgeous and impressive.

Sauceless Garden Lasagna

Went over well. I used regular lasagna and boiled it for only 4 minutes. Used a 9 x 13 pan and it was really full. It had a lot of liquid, but it was good anyway.

Tarte a L'oignon (French Onion Pie)

I see I'm the only one whose tart came out a bit too watery. I think I used onions that were too large, and next time, I would saute them longer - perhaps caramelize them. It did taste great, though! Good with steaks!

Tarte aux Moutarde (French Tomato and Mustard Pie)

Close to paradise! Made 2 in one day. Used cheeses on hand: 1st time, sharp Vermont cheddar; 2nd time, soft mozzarella and 4-cheese Italian blend. Both delicious, but gruyere would be even better. Drained tomatoes on paper towels, and made a couple layers of tomatoes and cheeses the second time, with fresh garden herbs (basil, rosemary, chives, and thyme) throughout, with a few sprinkled on top. Would like to try this recipe with brie. It made a beautiful presentation, and was well-liked by all. The first piece comes out messy, but following slices come out surprisingly neatly, and it's not too liquid-y.

Slow Cooker Corned Beef and Cabbage

I decided to try using the slow cooker for my corned beef this year. I questioned 8 hours on high, but I think this is what it really takes for best results. I tried the meat at various stages. Super easy recipe and very convenient! I didn't bother with the beer either.

Charley's Slow Cooker Mexican Style Meat

Very good - shredded it per other reviews. Next time will use the full amount of chili peppers called for - I was a little timid this time. I think I used a larger roast, too. Made burritos and chimichangas, and plan to make quesadillas with it tomorrow.

World's Best Lasagna

Very good - I agree with others that no salt should be added. I used hot Italian sausage at the butcher's suggestion - he said it had more flavor, and we all liked it. Next time, I will use 18 sheets of lasagna and make 3 layers, increasing the cheeses a little. I followed the suggestion on the box of lasagna, and boiled it for 4 minutes just to soften it, put the assembled dish in the refrigerator overnight, and baked the next day.

Shakshuka Middle Eastern Breakfast Dish

I make this using fresh tomatoes (peeled and cut up). I add lots of basil instead of the hot pepper sauce, and call it Eggs Provencale. I plan to try adding jalapenos from my garden next time, as I never thought of the hot pepper sauce idea.

Great way to use zucchini. I didn't add the half and half. I have added a minced jalapeno or two, and once I roasted a bunch of jalapenos, diced them up, and added them. When mixed with the other veggies, it isn't too hot at all.

Lemon Curd

My grandma always advised adding a pinch of salt to cut the sweetness a little, and I found that to be true, especially when using unsalted butter. This recipe is very good and easy, even if you have to improvise making your own double boiler using 2 saucepans. I think mine took less than 10 minutes to thicken. I used it as a filling on top of sweetened cream cheese in a lemon braid. Fabulous!
