Italian Beef Sandwiches

Reviewed: Dec. 20, 2009
I had a 7 pound sirloin round roast and it worked great - roasted an extra 40 minutes. We let it cool down, and then sliced some of it off for sandwiches before refrigeration. (No time!) They were great! We'll try again tomorrow and see whether refrigerating overnight makes a big difference.

Cappuccino Muffins

Reviewed: Nov. 28, 2009
They were good, but would be better if the coffee granules were dissolved in the milk before adding to the flour mixture. They were very moist. I may try buttermilk instead of milk next time, just for fun.

Pineapple Sirloin Skewers

Reviewed: Aug. 12, 2009
I used fresh pineapple chunks, pineapple juice, and some raspberry vinegar in the marinade. Very good. Added other veggies like mushrooms, green/red peppers, and zucchini to the kabobs too.

Mock Lobster

Reviewed: Aug. 1, 2009
This is really yummy! I thought it tasted like lobster. I dipped it in butter. Whether my experience was psychological or not, this chicken is moist and flavorful. I omitted garlic salt totally and added some garlic powder, but maybe fresh minced garlic would be even better. We're saving this recipe!

Ali's Greek Tortellini Salad

Reviewed: Jul. 23, 2009
Delicious. I double the marinade, reserving some to toss with the salad at serving time. I marinade the pasta, red onions, cucumbers, black olives, and artichokes together, and layer the spinach, cherry tomatoes, feta, and chicken on top, and then refrigerate. Then at serving time, it is a simple matter of tossing the salad with the extra dressing, and adding the eggs around the edge.

Mexican Shrimp Cocktail

I'm crazy about this. I prefer less ketchup, and I would add diced tomatoes and chopped cucumber if I had them on hand. Also, I like to make about twice as much of the liquid.

Hot Pepper Jelly

Reviewed: Jun. 22, 2009
I was emboldened to add 2 cups fresh chopped jalapenos after reading another reviewer's comment. It was not too hot - I loved it. It set up a little softer than other jellies, but I like the consistency.

Focaccia Bread

Reviewed: Jun. 21, 2009
Great! I proofed my yeast with sugar in 1/3 cup warm water. Then I added rest of ingredients using 2/3 cup milk as an expert reviewer advised. Added rosemary, too. I put a few sliced ripe olives on top, baked for 9 minutes, then added cheeses and finished baking. I made one round loaf for dinner, and the other half of dough is in the freezer, waiting to be thawed, formed, baked, and split horizontally later for a fabulous gourmet Italian sandwich. It's a picnic!

Zesty Hominy and Cheese

Reviewed: Jun. 21, 2009
Excellent! First time for our family to try a hominy dish, and everyone liked it. I used what I had on hand: only one 15-oz. can of hominy, subbed cream cheese for sour cream, added 2 minced fresh jalapenos and some chopped onions (sauteed), and a very generous teaspoon of cumin. Next time, I might try adding some tomatoes. I could live on this!

Oriental Tea Leaf Eggs

Reviewed: Mar. 29, 2009
These are beautiful and delicious. The other recipe on the site for these eggs added 3 cups water, so I added some water so the eggs would be more covered. I didn't have Chinese rock sugar, so I put in a little granulated sugar. I should have used black soy sauce instead of regular soy sauce, but they were still good and not too salty at all.

Foolproof Rib Roast

Reviewed: Dec. 28, 2008
This is how I have made prime rib roasts for years except that I let it sit in the turned-off oven for only 1 hour instead of 3 hours. The other thing is that it doesn't matter how big the roast is. It works out perfectly every time.
