Byrdhouse Mushroom Barley Pilaf
Fantastic! I did not have any cooking sherry on hand so I substituted 1/4 cup red wine vinegar and 1/4 cup ginger-ale. Also added boneless, skinless chicken thighs in the last 20 minutes. This is truly a keeper!

Spaghetti Squash I
Excellent! My 3 year old ate it and my husband said "spaghetti squash is better than I remembered it" I took the advice of others and added 1 1/2 c water when baking and turned out perfect. Used EVOO instead of vegetable oil, omitted olives and sauted broccoli instead for color.

Cheryl's Spinach Cheesy Pasta Casserole
Very good and easy! I modified by replacing much of the oil with milk, as recommended by other reviewers. I also only had one jar of pasta sauce, but had a half jar of alfredo sauce so used that for the top layer. Fantastic, and my 3-year old didn't even pick out the spinach!
