Coconut Tilapia with Apricot Dipping Sauce

I opted to bake the tilapia rather than fry it to save calories. Other than that, I followed the recipe exactly. I enjoyed it very much but my husband and son said it was just okay. I'm sure they would have liked it if I had fried the fish.

Famous Butter Chicken

This came out really good. The chicken was moist and tender but the bottoms were soggy. I turned them over and broiled them for a couple of minutes to try and crisp them up. I also added some garlic powder in addition to the garlic salt because we like our food garlicky. I only needed one egg.

Butternut Squash Casserole

This was so good. I made this for Thanksgiving Dinner and it was a big hit. Per the advice of others, I cut down on the sugar by half. For the topping, I chose not to use the cookies because I didn't want it to taste like a dessert. I substituted oats combined with chopped pecans, cinnamon and a little flour. Again, I cut way down on the sugar by half. I mixed it all with melted butter until crumbly and topped the casserole.

Grandma's Corn Pudding

This was so good. I made this for Thanksgiving and it got rave reviews. I doubled the recipe but only used half the sugar. I also added one box of Jiffy cornbread mix as someone else suggested.

Ranch-Style Thighs

I didn't have Italian Seasoning so I added some of my own: garlic powder, parsley, oregano, basil and pepper. I had to use a lot more than 1/2 cup of the ranch dressing. Next time, I think I will add a little cayenne as well. Very good.

Burgundy Pork Tenderloin

The pork was very tender and nicely seasoned. I browned the pork first and I added a can of sliced mushrooms but omitted the celery. The gravy did not thicken for me so next time I will thicken it with a little cornstarch dissolved in water.

Zippy Swiss Steak

This tasted delicious and the meat was very tender (I pounded it before flouring). As written, there was no sauce in the pan -- just tomatoes and onions. Next time I will use one can (15 oz.) of diced tomatoes and one can (15 oz.) tomato sauce. I also added some seasonings to the tomato mixture: 1/4 tsp. each marjoram, thyme and paprika, one bay leaf and a couple pinches of black pepper.

Beef Burgundy I

I cut back on the onion; using two medium sized onions instead of three and I also added about one tablespoon of minced garlic. I also added two teaspoons of garlic powder and I thickened the sauce at the end with cornstarch mixed with water. Delicious over noodles. We dipped our biscuits in the sauce. I will definitely make this again.

Turkey Burger Pie

The turkey mixture was quite bland so I added minced garlic, garlic powder, parsley, oregano, salt, pepper and worcestershire sauce. I also added sliced mushrooms. It was good but nothing fantastic. I like ground chicken breast so I think if I try this recipe again, I will use ground chicken. Ground chicken doesn't taste "gamey" like ground turkey.

Apple Breakfast Bread

I took the advice of others and added a few tablespoons of oil along with the butter and I used all brown sugar instead of white. I also added one teaspoon vanilla and cut down the cloves to 1/4 teaspoon. I stirred in 1/2 cup raisins and 1/2 cup chopped pecans. Although the bread tasted good, it was very dry. I did not shred or grate the apples because I was lazy so I added them in chopped. Perhaps if I shredded them, the bread would be moist. I don't think that I will try this recipe again. There are other recipes that taste delicious and are very moist.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

I followed the advice of another reviewer here and baked the tenderloin in the oven at 300 degrees for 1 hour 10 minutes, brushed on some glaze, put back in oven for 10 additional minutes, turned tenderloin over and brushed rest of glaze on other side and baked l0 more minutes (total baking time of 1-1/2 hours). I also cut the chili powder down to 1 teaspoon and omitted the cilantro completely since I do not care for it. My house smelled so good while this was cooking. Delicious.

Blueberry Ricotta Squares

Since some said the cake was not sweet enough, I added extra sugar in both the bottom batter (used 1 cup total) and the ricotta batter (used 1/2 cup total). I also sprinkled some on top of the cake before placing in oven to give it a crunchy top. I also used frozen blueberries since some said it was dry. With these changes, I thought it was sweet and it was very moist. As far as sweetness goes, it is a matter of preference. I think I would have liked it with less sugar also.

Baked Potato Salad II

I followed the advice of others and used 1/2 mayo and 1/2 sour cream. Also added green onion in addition to the regular onion and black olives instead of green. My kids absolutely loved the potatoes but my husband and I just thought it was okay. I'm not a big fan of Velveeta so maybe that is why we didn't love this recipe. If I try this again, I will use regular cheddar cheese.

Turkey with Mushroom Sauce

I cooked a 7-1/2 lb. turkey breast for eight hours using chicken broth instead of the wine. The breast was very moist and tender. Since it was pale, I browned the top under the broiler for a few minutes. I like my meat browned.

Chocolate French Toast

The problem that I had was the cocoa powder would not blend in with the remaining ingredients. The first four slices had a thick coating of cocoa powder on them and they were not edible. The remaining slices did not have enough cocoa powder in the batter so they did not have an enough chocolatey flavor. I used a wire whisk in making the batter. My suggestion would be to blend the ingredients in a blender. I was wondering if chocolate syrup could be substituted for the cocoa powder or if chocolate milk could be substituted. Anyway, I will not be trying this recipe again.

Chicken In Basil Cream
