Coconut Tofu Keema

I added raisins and nuts to the rice I served with this, and the meal was delicious. Will definitely make this one again!

I used finely diced tomatoes instead of tomato sauce and made a chunkier version of the sauce. It was a big hit with my family. *** EDIT *** Since my initial review, I have made this recipe several times, and still love it! It's my regular enchilada sauce recipe now.

Vegetable Paella

Though I found this to be somewhat bland, my kids looooved it. I doubled (or more) the paprika, and I used half a tablespoon of minced garlic instead of garlic salt. The recipe doesn't specify how much oil to use, and I felt I needed quite a liberal amount to keep it from sticking. I served it with wild rice, but I think I will try it with white rice next time.

Cabbage Borsht

I made this soup with vegetarian chicken patties instead of chicken, and it was a big hit with my family. My daughter asked me to make this a lot more often!
