Rosemary Mashed Potatoes and Yams with Garlic and Parmesan

Sauteed Mushrooms in Garlic

I live in an alcohol-free household, so I made these using vegetable broth in place of the wine, and served them over pasta with a little dusting of fresh-grated Parmesan cheese. Absolutely marvelous, and I will make these again and again!

Slow Cooker Lime Chicken with Rice

I made a vegetarian version of this using vegetable broth, vegetarian "chickn" strips, and a wild rice blend. I adjusted to give the wild rice enough time to cook. Otherwise, I was true to the recipe. This was delicious, and I will be making this again!

Garbanzo Tomato Pasta Soup

I added oregano, rosemary, parsley, and a bay leaf. I also added some sliced carrots that I wanted to use up, and increased the pasta by about 50%. I threw in a pinch of sugar just because it seemed "right." The soup turned out delicious, and my kids asked to have it again the next night! We ate the soup with bread for dipping, and shredded cheese sprinkled on top. I'm sure I will make this again, and I will probably make the same adaptations to the recipe.

Garden Veggie Cheese Soup

I wasn't sure about this recipe, but it turned out delicious! I substituted vegetable broth for the chicken and omitted the sherry. I also added more carrots and left out the green beans because I had some carrots I wanted to use up. I used shredded cheese instead of the processed stuff, because that's what I had on hand. I think the texture would have been better if I had used the processed cheese, but it was still an excellent soup. I will be making this one again.

Spanish Garlic and Vegetable Soup

I made this following the recipe almost exactly. I did use veggie broth instead of the water. This is a delicious, soothing soup! It's mild tasting but still has lots of flavor, and my husband liked it, even though he claims to hate cauliflower and cabbage. It was very good with grilled cheese sandwiches for lunch. I know I will be making this one again.

Sausage Soup

I made a vegetarian version of this using vegetable broth and vegetarian sausages. I added quite a bit of extra water because it seemed more like a casserole than a soup. It turned out delicious and everyone in the family ate theirs. This recipe is definitely a keeper.

Grilled Asparagus Soup

This was really quite good, and my kids liked it, which is always a plus. I thought it was a good soup but could use a little seasoning change to give it more flavor. . . not sure what to add, though. Will probably make this again and tinker with it a little, though it is not bad as written.

Musaka

I made a vegetarian version of this using a meat substitute. I used a 14.5 oz. can of tomato sauce and adjusted the amount of water to compensate. I also doubled the egg and yogurt mixture. I used Italian seasoning blend as a substitute for the savory. It was perfectly done after 30 minutes in the oven, and was very well received by my entire family. It was on the mild side, but that appeals to my kids, so that was fine. I will definitely be making this one again.

Portuguese Soup

I would say the serving size is a bit off. 2 servings was enough to feed 4 people lunch at my house. I made a vegetarian version of this by using vegetarian sausage (plus a dash of smoke flavoring) and vegetable broth instead of the beef. It has a nice, peppery warmth to it, but not so much as to be too spicy. My ultra-picky teenager (home sick with a sore throat) said this was good and ate nearly all of hers!

Lemon Thyme Rice

I think this is delicious when you use the original recipe amount of 1 tsp. of dried thyme or 1 T. of fresh thyme. I always use vegetable broth instead of chicken, since I am vegetarian. I added a little garlic to the butter, as well, and doubled the lemon juice. I have made this with brown rice and with a wild rice blend; both were excellent.

Veggie Beef Bundles

I made a vegetarian version of this using veggie burgers instead of the beef. I also omitted the mushrooms because I have a couple of picky eaters in the family who would have objected to them. This turned out delicious! When I make this again, I will add a little more water to the onion soup mix. Could be the brand I used, but that part turned out a little thick and pasty. I may experiment with different combinations of vegetables, seasonings, and veggie meats. This is a fun change of pace from the ordinary dinner at my house.
