I run an online jewelry business from home www.ranchglam.com and I have three horses that I barrel race on. I also enjoy running and reading. I love cooking and love experimenting with new recipes and new ingredients!
My favorite things to cook
Everything! I insist on cooking homemade because its a challenge and because its healthier. I love cooking mexican food, and make some killer salsa! I also love new breakfast recipes and salads. My favorite thing is making something like salsa or green salad and just adding whatever is in my fridge or produce basket. Those creations are always the best!
My favorite family cooking traditions
The women in my family dont know what a measuring cup is! Its so much fun when we all get together....one person will be making something, and someone else is throwing spices in and adding to it. Our family gatherings always have amazing food that none of us could recreate if we tried!
My cooking triumphs
Baking! I have finally figured out baking! You cant just throw ingredients in like you can when you cook. Ive also made a few pretty difficult recipes like a crab stuffed filet mignon which takes forever, home made maple bars, and I canned jam, salsa, pasta sauce and pickles this year! I love a challenge to make something really difficult!
My cooking tragedies
Cookies, cookies and all cookies....until I found the most wonderful recipe for cookies on here. It never fails....well unless you accidentally add powdered sugar instead of flour!

Karen's Baked Banana Stuffed French Toast
Yummmmy!! This was so good and so easy! My boyfriend put peanut butter on his and said it was good too! This is so quick, easy and healthy ( I made mine with whole grain bread and skim milk) I will be making this one again!

Veronica's Apple Pancakes
These are amazing! Theyre not too sweet and have amazing flavor even without the apple. Theyre also quick to make! I will make these again for sure!

Tomato-Cornbread Salad with Avocado and Cilantro
This is AMAZING!! It has such great flavor...I even burnt my cornbread and it was still sooo good. I didnt have red wine vinegar, so I used balsamic and it still turned out amazing! This is a great side dish, lunch or snack. Its my new favorite!!
