Veronica's Apple Pancakes
These are fantastical. The inside will be very moist because of the apples even when thoroughly cooked. Next time we may try them with more cinnamon.

Six Can Chicken Tortilla Soup
Delicious and very easy. This was a big hit with my family over the holidays. I think next time we'll try adding a can of hominy too.

Microwave Chicken Parmesan/Chicken Breast Cacciato
Very tasty. We baked ours in the oven at 350 for 30 minutes. It came out crispy and very tasty. Served it over spaghetti with marinara.
