Spinach Salad with Citrus Vinaigrette

The vinaigrette is just fabulous - one of the best dressings I've tried from this site. I like the combination of ingredients in the salad - it's more of a "classic" spinach salad, with the mushrooms standing in texturally for the traditional hard-boiled eggs. Brilliant!

Caramel Frosting I

I used this on a spice cake for my daughter's birthday, and everyone loved it. I followed the recipe exactly as written. After reading reviews stating that it sets quickly, I just dumped it on top of a 9x13 cake, still in the pan, and spread it around. I had no trouble working with it. I loved the firm, crisp surface texture after it sets. It is sweet, as others noted, but I didn't think it was overwhelming. This is definitely a keeper!

Carrot Soup 'a la Louise'

Wow! I can't get enough of this soup! The subtle blend of flavors is perfect. It's a great accompaniment to quiches, sandwiches, or hearty salads. I use vegetable broth instead of chicken, and half & half instead of cream. Yum!

Alyson's Broccoli Salad

I'm normally not a fan of raw broccoli, but I found myself going back for seconds of this! Spectacular! I used 2 broccoli crowns, and it was perfect for the amount of dressing, onions, & raisins. I decreased the amount of sunflower seeds to 1/2 cup, and used a handful of Bacos instead of real bacon. Be sure to let the salad sit overnight - it makes a huge difference in the taste, and the salad absorbs the excess dressing. Great recipe!

Spectacular! My husband & I agreed this is the best salad we've ever had. I recommend starting with 1/4 cup sugar as previous posters suggested, then adding more to taste. I wound up using 3/8 cup. Other than that, I didn't (and wouldn't) change a thing!

Coleslaw with a Difference!

While I love the idea of adding salsa to coleslaw, I wasn't entirely pleased with my results. I used Newman's Own Tequila Lime salsa, and tasted the dressing as ingredients were added. I thought it tasted better as just mayonnaise and salsa - the addition of the lemon juice made it too tangy. That could have been because of my choice of salsa, though. I also thought the seasoned salt made it too salty. Next time, I would go with a plain salsa, and a few pinches of assorted spices in place of the seasoned salt. Also, I used the entire 16-oz bag of slaw, and had plenty of dressing. With a little tweaking, I could easily suit this recipe to my tastes.

Enchilada Casserole

I thought this was very tasty, with only a few minor adjustments necessary. I precooked the onion, jalapeno, and garlic, doubled the number of tortillas (using six per layer), and decreased the amount of cheese slightly. I also found it was done after less than ten minutes uncovered. The flavor is quite mild - perfect for kids and for those who don't like spicy-hot dishes. If you want a little more kick, try adding chili powder, cumin, and/or more peppers as previous reviewers suggested. I'm a big fan of tempeh, and thought it added a nice texture and subtle nutty flavor to the dish. I'll definitely be making this again.
