Homefried Potatoes with Garlic and Bacon

These are delicious! I drained off a good amount of the bacon grease as well - there was a lot in the pan after frying the bacon. Someone topped it with sour cream?? That I will have to try - yum! I sliced my potatoes medium-thin and they were done in 20 mins along w/ the onions and fresh garlic I put in. Loved this!

Marie's Chicken Bake

This was really good - I used Shake and Bake Extra Crispy instead of bread crumbs. Yes dipping these babies in butter does create grease but man oh MAN is this yummy - the chicken is perfect inside.

Stuffed Shells III

These are indeed authentic stuffed shells. YUM!! I used Giada DeLaurentiis' recipe for a simple marinara for this dish. Delicious.

Sugar Cookie Frosting

Excellent, excellent. I stole someone's idea and used butter instead of the shortening. I also took someone else's advice and cut the recipe in half, as well as added the sugar to the butter in 1/2 cup increments. I only made 30 sugar cookies, and I still had a good 1/2 cup of frosting left over. YUM! It does dry fairly quickly, so if you are putting on sprinkles, etc. it's great to have a kid around who is willing to sprinkle right after you frost. Thanks!

Ultimate Twice Baked Potatoes

These are great and really easy! I would recommend adding the sour cream in quarters to ge the consistency you like. Same w/ the milk. I had onion powder on hand and used that. I mixed half of the bacon in w/ the mixture and sprinkled the rest on top w/ the cheese. Yum!

Moroccan Lentil Soup

I made this in a slow cooker - it is delicious but came out much thicker than I expected. I'd recommend making it on top of the stove to be able to monitor the consistency better. Don't get me wrong, it was delicious - but if you're looking for soup rather than stew I would skip the slow cooker.

Cornell Chicken Marinade

I live in Ithaca so I have to recommend this as the best bbq marinade ever. You can cut the salt in half. I marinate for under 24 hours, it can be very strong.

Spanish Rice II

This is great and so much better than boxed rice. The tomatoes w/ chilies make it very spicy - I try to find mild rather than hot in the store. It is really easy and my 4 1/2 year old will eat tons of it.

Artichoke and Roasted Red Pepper Dip

This is just plain freakin' delicious. If you are tired of the same old artichoke dip, please make this. I don't use marinated chokes though, I buy canned artichokes usually in brine of some sort. I love it because you are only using 3 tbsps of mayo. The red pepper gives it zip. Bring copies of the recipe, you will be asked.

Slow Cooker Thanksgiving Turkey

This recipe is delicious, plain and simple. I find excuses to make it so I can have stuffing and mashed potatoes with gravy. The turkey is delicious. I have done it for 6 hours and also for longer. Either way it is so good. Did someone say stuffing?

Slow Cooker Chicken Taco Soup

This is really good at the end of a long day. We spoon it into warm tortillas and top w/ avocado and sour cream. Beware if you are afraid of too much spice, the combination of the crushed red pepper and the tomatoes w/ chilies really kick this recipe up. If you want less spice I'd ditch the crushed red pepper or just use italian-style diced tomatoes instead.

What have I been spending $3.99 on tiny tubs of hummus for??? Had no idea how easy it would be to make this - thank you so much - delicious! I can't wait to try my favorite variations i.e. roasted red pepper, roasted garlic, etc... YUM!

Harvest Pork Stew

This stew was delicious! After sauteeing the onion and garlic w/ the pork, I threw in the carrots, potatoes and some mushrooms and sauteed it for a bit longer. Then I poured in one cup of the chicken broth and scraped up all the brown bits before putting it all in the cooker w/ the rest of the broth and spices. I skipped the butternut squash, only because I didn't have any. Would love to try it next time though. At the end I mixed 2 tbsps of flour and a bit of cold water and stirred that in at the end. It made a savory gravy! Mmm, I'm going back for more....
