Tender Italian Baked Chicken

I really enjoyed this. Very moist and flavorful. It is also great as a breading for fish, When I did the fish though, I used an egg to coat instead of mayo. Still fabulous.

Yummy!!! I marinated the chicken in Italian dressing before I cooked it and added sliced black olives. I served it hot with cheese the first night and then ate it cold as leftovers. I think I'll add scallions next time. The possibilities are endless. What a quick, versatile dish. I shared this with all my friends.

Creamy Ranch Pork Chops and Rice

I enjoyed this a lot. When I finished the cooking, I placed the rice in a shallow glass dish, placed the pork chops on top of the rice and poured the sauce over it all. Next time I make it I will use a whole can of milk instead of half for a little more sauce and add some chopped brocolli to the mix. I also used the whole packet of ranch mix and cooked the rice by itself. Thanks for the recipe.

Lemon Horseradish New Potatoes

Very good. Next time I will slice the potatoes and double the horseradish and lemon, because the sauce is SO good. Thanks for sharing.

Lemony Shrimp over Brown Rice

Macaroni Salad for a Crowd

I don't care for macaroni salad as a rule, but I made this dish for our Memorial Day BBQ. No big rave reviews from the crowd, but I liked it and so did my husband. I read the review the original poster added and increased the mayo to 1 cup like she said and used all the juice from the relish. I also added green olives. Thanks for a macaroni salad recipe that I actually like.

Old Settlers' Baked Beans

Hoppin' John

This is a good recipe, but I grew up in the South. Real Hoppin John's are a little different down there. You cook the black-eyed peas and the rice but then you put them in a dish and add fresh tomatoes, onion and corn bread to the dish. The southern version is a very good summer time, fresh from the garden version. Try it both ways!!!

Campbell's® Easy Chicken and Cheese Enchiladas

This was a big hit with the husband. As another reviewer suggested, I added a package of taco seasoning to the sour cream mixture. My package of tortillas came with eight and I found I had enough filing to use all eight with what the recipe yeilded. I added some cheddar cheese right before it finished baking and also added black olives to the top along with the tomatoes and green onions. We will definitely have this again.

Tarragon Chicken Casserole

My husband and I really enjoyed this dish. Next time though, I will cook my chicken with sime garlic and onions before adding to the recipe. We are BIG fans of garlic.
