Greek Potato Stew
This was fantastic! I made it as described with maybe a little less olive oil and the result was a very satisfying and flavorful vegetarian dish. Garden fresh tomatoes, potatoes and oregano were a plus but I think this will be a cold weather staple at our house with canned tomatoes and dried oregano.

Vegetarian Shepherd's Pie
This was really tasty! I added some zucchini and mushrooms to the veggie mix and just used a slightly bigger pan. Yum.

Red Potato Salad
Really tasty. I added more dill and I might cut down on the mayo and sour cream a little next time. I don't think it needs quite so much. Still really yummy, a refreshing addition to a summer meal.
