Southwestern Lentil Salad

Reviewed: Aug. 3, 2009
Good flavorful salad. Still a bit too earthy-tasting. I added a can of diced tomatoes (28 oz) and it tasted better. I also added a tsp of lemon pepper. Next time I will add some fresh lemon juice.

Cucumber, Tomato, and Red Onion Salad

Reviewed: Jun. 5, 2009
I've been making this salad for I long as I remember, although I've used lemon instead of lime. Another dressing variation is to add a splash of olive oil mixed with some garlic powder (to taste).

Garlic Chicken

Reviewed: May 29, 2009
The chicken turned out very yummy. I would only make one adjustment to make this a 5-star recipe. I would either pound the chicken before cooking it in order to make it more tender or slice each chicken breast half into two thinner pieces (but then you would need to adjust cooking time). The problem I encountered with using just a chicken breast half is that it was way too thick and the flavor didn't get all the way through to the center.

Slow Cooker Turkey Breast

Reviewed: May 21, 2009
Delicious! I've never had turkey this tender! And no, you don't need any liquid! Just make sure your slow cooker insert allows for dry cooking. My old KitchenAid slow cooker insert cracked both times I was making this. It worked out just fine in a cast aluminum insert. HINT: You can make your own onion soup mix! 8 tsp. dry minced onion 2 tsp. onion powder 4 tsp. beef bouillon or 4 cubes Black pepper (optional)

Slow Cooker Chicken Taco Soup

Reviewed: May 21, 2009
No wonder this soup got so many stars! It's excellent! I followed the recipe exactly except for the beer (didn't want to use my Guinness). I just substituted that with low-sodiium chicken broth. I made this twice and realized that the key in tender chicken is breaking it up really well. If you don't break it up well, it'll just turn out like any ol' slow-cooker chicken breast - tough and chewy. This is great to freeze too!

Meatloaf Muffins

Reviewed: May 21, 2009
My picky little eater actually liked these! I thought they were great. They were not greasy (I used 93% lean beef) and pretty flavorful. I personally wouldn't touch them ;) but I will be making these again and again for my girls!

Morning Glory Muffins I

Reviewed: May 21, 2009
Yummy! Since it was my first time making these (or maybe I'm just slow), prep time took a lot more than just the 15 minutes. But it was well worth it! The muffins were delicious!

Greek Veggie Salad II

Reviewed: May 21, 2009
Excellent! This is the best homemade Greek Salad I've ever had. The key, I think, was the dressing. It was so good that I now use this dressing in many other salads that I prepare. Unlike other salads, this one can be left in the fridge overnight and it just gets more infused with the flavor!

Garlic Chicken Fried Brown Rice

Reviewed: May 7, 2009
All I have to say is WOW! I didn't want any chicken in the rice, but used all the other ingredients and also added one egg at the end. The rice was amazing! This is a keeper!

Bake Sale Lemon Bars

Reviewed: Jan. 8, 2009
My rating is for a recipe adjusted by suggestions of GourmetMommy. The Lemon Bars were out of this world! I used True Lemon instead of real lemon juice. 16 packs = 1 cup. Phenomenal. There's no difference between a freshly squeezed lemon and True Lemon diluted in 1 cup of water. The second time I prepared these Lemon Bars, I didn't have neither lemons nor True Lemon packets. So I used bottled lemon juice. Don't ever do that! The Lemon bars tasted acidic and fake.. Big mistake on my part. So I'll stick with real lemons and True Lemon packets going forward!

Flourless Peanut Butter Cookies

We love these cookies! We like ours super-soft, so I used 1/2 cup brown sugar and 1/2 cup white sugar. It did take about 15 minutes to cook though...

Slow Cooker London Broil

Reviewed: Oct. 26, 2008
I couldn't give this recipe 3 stars because I have a feeling I've done something wrong, but overall I would give this 5 stars for flavor and 1 star for being unable to chew it. I used London Broil and followed the recipe exactly. I have a 7 qt. slow cooker (not sure if that makes a difference though) and I cooked it on low for 10 hours. The meet turned out tough and chewy. I had a feeling this would happen, so I cut it in into strips (going against the grain) prior to putting the meat into the slow cooker. I wish someone could give me a feedback on why the meat turned out so tough, but I don't think this site has that feature.

Slow Cooker Chicken and Dumplings

Reviewed: Oct. 20, 2008
Amazing! This is the first slow cooker chicken recipe that tastes different from all the other slow cooker chicken recipes! I cut up the chicken breasts into 1-inch thick strips (against the grain), otherwise I found that chicken breasts tend to fall apart into those long fibers that are impossible to chew. I also took another reviewer's suggestion and used broth instead of water and 1 tube of biscuit dough instead of two. I think it would have been too thick with two.

Chicken Broth in a Slow Cooker

Reviewed: Oct. 12, 2008
This was the yummiest broth I've had in years. I used chicken wings. I doubled the recipe, so I was left with a lot of chicken. I used whatever meat came off the bones for the chicken soup. I will definitely be making this again!

Creamed Spinach II

This was just ok. The spinach wasn't soft enough. Restaurant kind is a lot creamier too. I will try to make this again with a few adjustments - possibly more cream cheese next time.

Slow Cooker Chicken Parisienne

Reviewed: Sep. 22, 2008
Boy, am I glad I waited a day to rate this! When I made this yesterday, it tasted like boiled chicken to me, but after sitting in a fridge for one night, it tastes pretty good! I cooked it for 6 hours (in a 7 qt slow cooker) and by the time it was done I could not pick it up with the fork because it was falling apart. So tender! But I would definitely let it sit overnight - it makes such a difference!

Slow-Cooked Chili

Reviewed: Sep. 22, 2008
Absolutely loved it! It's a very easy recipe and it turned out great. I made a few changes: I used half-chicken, half-beef, but the flavor was great, even for my beef-lovin' husband! He said he would not have known there was chicken in it. I have a 7 qt. slow cooker and I cooked it for 8 hours.

Great flavorful salad! I didn't have black beans, so I used black-eyed peas. I also added some chili powder and I really think that's what really made it perfect. I love this easy recipe for a very filling salad!

Baked Mushroom Rice

I followed the recipe exactly and the rice turned out clumpy and flavorless. Also dry oregano seemed to have really ruined it for me.
