Garden Fresh Tomato Soup
This has become a staple at my house. I always double the recipe – it’s just not enough for us for a couple of meals. If your tomatoes are not perfect red or it’s off season, I suggest adding a few tablespoons of tomato paste to add the color. The soup is great as is, but I have experimented adding other things I had on hand e.g. chopped celery root, celery stalk etc … I never run this thru the food mill. I just take a hand blender and blend the whole thing in the pot (take out the cloves before). Why get rid of all the fiber? – it’s good for you. The soup is very good and quick to make – highly recommend it!

Orange Pumpkin Loaf
This cake is delicious, moist and very fragrant thanks to the orange. Do not peel the orange – use the whole thing, it really makes this cake. The pumpkin flavor is very minimal (it does give the cake great color), so if your guests do not like pumpkin, they won’t even notice. This is very easy to make, so easy that my husband (who never baked before) made this under my light supervision. He loved the way it came out and the fact that he could throw the whole orange into it. Try this, you will not regret.
